    Homemade Pa-Dek / ปาแดกต้มทำที่บ้าน
    Ingredients / ส่วนผสม
    2 bottles of fish sauce (ground preserved fish) / น้ำปลาร้า/ น้ำปาแดก
    2 bottles of fish sauce / น้ำปลา
    2 bottles pa-dek sauce or pa-dek paste / ส่วนที่ดีที่สุดของปลาร้า/ ปาแดก
    3 tbsp. crab paste / น้ำปู
    4 heads of pickled garlic / กระเทียมดอง 4 หัว
    1/2 cup pickled garlic juice / น้ำกระเทียมดอง 1/2 ถ้วยตวง
    1-quart shrimp paste / กะปิ 1 ควอต
    1 cup chicken bouillon powder / ผงน้ำซุป
    1/4 cup anchovy sauce- pa-dek sauce / น้ำปลาร้า/ น้ำปาแดก
    1/2 cup fresh chili / พริกสด
    a handful of Pak-Ka-tin leaves / ใบกะทีนหนึ่งกำมือ
    1/2 of pineapple / 1/2 ของสับปะรด
    1-gallon drinking water / น้ำดื่ม 1 แกลลอน
    Note: After boiling for an hour removed chili and pineapple blend them to gather then put them back into the hotpot, and continue to boil for 5 more minutes then stop the heat.
    หลังจากเดือดประมาณหนึ่งชั่วโมงให้เอาพริกกับสับปะรดมารวมกันแล้วผสมผสานแล้วเทลงในหม้อปรุงอาหารแล้วต้มต่ออีกประมาณ 5 นาทีจากนั้นจึงหยุดความร้อน
    Filter out pa-dek juices / กรองน้ำปลาร้าออก
    throw away the junks / ทิ้งขยะ
    Put pa-dek juice inside the jars / ใส่น้ำปลาร้าไว้ในขวด
    keep inside refrigerator / เก็บในตู้เย็น

    Hi, Ms. Gigi! I watched your video making pa daek and I was so enticed by it. I decided to make my own version of pa daek using the ingredients we have here in the Philippines. I loved it! Now, I am enjoying the papaya salad of the Lao thanks to you. Love your videos!

    hi gigi im learning a lot from your channel. that plant survives texas winter. i think thats mimosa tree. where did you buy that plant. thank you

      Some friend gave me the seeds and then put them in the soil back yard, and keeps growing since. It died out in winter, and it's coming back next spring.

    You may have answered this elsewhere but, are those leaves from a mimosa tree, scientific name: Albizia julibrissin ?

    After making the padek, how long can you store it in the refrigerator? Mine is about a year old!

      You can keep them inside the plastic bottle then put it in a refrigerator, you can keep them for many years to come but most of the time it runout before the year ended. lol
