I put the entire stalk in a glass of water only with the roots submerged. The stalks rise up out of the glass and the leaves are above the rim of the glass. I cover the top loosely with a light plastic wrap or lightly with a paper towel but the leaves must be able to breathe. I put the glass inside the fridge and cut only what I need, replenishing water only as needed. The leaves and stalks stay crispy fresh so long as the water is clean and the leaves can breathe. They last forever until you use all of the leaves. I also keep them in the water and use the cilantro stems to flavor sambals, sauces, etc. REMEMBER, LET THE LEAVES BREATHE BUT KEEP THE ROOTS IN WATER.
water is unnecessary...there are no roots, so you're just water-logging and wasting the submerged stalks. Just rinse and shake off the cilantro after every time you use some, keeping it in a vented container on the top shelf of the fridge.
In many stores they sell coriander with the roots. So water is necessary. I follow the same technique and put the glass in the door of the fridge to avoid spilling the glass in the fridge, it works well.

Thanks for the tips, paper towel help , I plant cilantro in the spring and summer, and collect in the summer and fall, then I wash and put in the saldad spinner or let dry in paper towels, after I cut and put in zipper, freezer bags to use for all the winter months and spring, it tastes amazing

I chop my fresh cilantro, stems and all, and put it in a plastic container with kitchen towels at the bottom and a kitchen towel at the top. The trick is that the cilantro must be very dry when you cut it. Then to use, open the box, get a handful and be sure to put the paper towel on top, close the box and put it back in the freezer. It is wonderful how it keeps nice and fresh.
so freezer not crisper? I would always rinse my cilantro before putting back in the fridge figured that's what that do in stores so why not at home. my parsley stays fresher longer (guessing i put a better seal less air in bag) but the cilantro turns brown and dried out quicker

I wash all my fresh herbs, dry them with paper towels, place in freezer bags, and freeze. They last forever, but turned dark, so you can't use it for garnishing; only for cooking. I do the same with pimentos, and hot pepper's. Thank you for sharing your knowledge with us; I'll surely try it!
I buy mine from a market about every 3-4 weeks and keep it in the refrigerator, in a bunch. Without taking off the tie, rinse the whole bunch under gently running water or in a bowl of water. Pick out any dead leaves or weeds, then cut about 2cm from the bottom of the stems and discard, or use it that day if you need a little. Put about 6cm of water in a small plastic beaker and put the whole bunch in the water, as if it was a bunch of flowers, then put the beaker in the refrigerator. You need to rinse the stems, remove any dead leaves and change the water twice a week, or whenever you get it out to use some. It will easily keep fresh for 3 weeks or longer. I keep it in the small bottle rack in the door, along with a beaker of mint.
I wash mine let dry completely, wrap in a paper towel and put inside a glass jar, stay fresh up to three weeks with lid close tigh every time you use it works for me.

i soak and wash mine in baking soda water, rince, give a good shake fluff let sit on the counter till compleetly dry, and store in one of those tubs the salad greens come in with paper towles. oh and before i wash , i trim the stims. works grate!! some times just give them a good shake just for the heck of it :)

I use paper towel around the greens & wrap newspaper too for extra absorbency for cilantro, scallions, spinach, celery, lettuce, basil, mint, etc. sometimes, changing out the paper towel and newspaper after a week or more to prolong the life of vegees and eventually, me

I also wanted to comment about kari leaves. They aren't very flavorful when dried and they do freeze well if coated with oil. But leaves left to dry become very rancid quickly so if you cannot use them freshly picked, freeze them. I have a tree so I'm lucky that when I need them I just go outside and pick a few fronds for whatever dish I'm making.
