- This is probably the greatest day of my keto journey, because today I am bringing you a recipe of a keto french fry. I'm not a fan of jicama fries, so I decided that I needed to find a way to make keto french fries out of cauliflower. It took some work, but the results were well worth it!

You're welcome! I've been through quite a few styles over the years. It's really been trial and error. Well that and cost. The current setup was quite expensive, but I think the videos look much better that way. Thankfully I can't think of anything else that I want to change for the time being.

I didn't have a food processor on hand and I didn't feel like freezing these. My rebellion led me to discovering some really good hash brown rounds. I used yogurt because I didn't have cream cheese and tried my best to hand emulsion blend the cauliflower rice I had. I ended up frying a spooned patty in olive oil and I'm so glad that my flop turned into a success. My patty doesn't hold well together because I didn't freeze it but the taste turned out amazing. I have a few patties in the oven now to see what kind of result I'll get. I added rubbed sage, more black pepper and onion powder for more flavor 😚🤌🏾
Long story short; freezing these are mandatory.

I might try this with arrowroot or sunflower flour. I can't even think about buying yet another keto flour...but my mouth was watering watching that taste test.
Yah there are SO many different flour substitutes. It's hard to have them all!

Just get some Jicama or Rutabagas ... peel and cut them like you would a potato and fry. Perfect low-carb fries. Search for "Jicama fries" or "Rutabaga fries" for recipes.

I actually just use a green screen. there are two cameras. One faces down, one faces me. Then there is a boom mic overhead. I posted a picture of how it looks on Instagram the other day, if you're curious. But yah, everything is filmed in 1 take except the into and outro, but those are filmed after everything is done.
You'll want a harder cheese. Maybe mozzarella would do. Cottage would sub well for the cream cheese.

Do you know of a lupin flower substitute other than almond flower that works for this, by any chance? I only get dried lupins here on my little rock in the Atlantic. I can grind that to a flower but that doesn't seem to be the same. You say the flower has very little taste but the flower I make has a very unpleasant taste. 😕

Weird! I wonder if it's a different variety of the lupin bean that they use. I didn't notice a taste at all in the stuff that I bought. Coconut flour works, but you'll need to use less. It will also give a mild coconut flavor, but it is covered up pretty well by the cauliflower.
What Island are you on? I'm going Island hopping in the Caribbean and South Atlantic in April!
Can you use almond flour instead?
Have you tried frying them in Avacado oil?
Which do you think would work best almond, coconut or pure protein powder? I can't buy another flour. I love your recipes btw!
I agree, there are too many flours out there. I just happen to have the luxury of buying all of them and finding which one works best because this is a "business". I tried all of the above except protein powder. I've found that you can replace about 1/3 of the flour in a recipe with protein powder, any more and it gets a weird texture IMO. Coconut flour works because it is finer, but you get a hint of coconut in your fries. They texture is still pretty good, but the taste depends on your feelings towards that mildly sweet coconut flavor that coconut flour creates. That being said, the cauliflower does cover it up quite a bit. Almond flour works great. It'll just feel a bit gritty because it isn't ground a fine. Lupin flour is almost like a chalk feel. It's super fine.
TLDR; they'll all work. It's just a preference

Do you know if coconut flour would be the same amount? I can barely taste coconut so I figure it's worth trying. Like the kiss my keto coconut bars, you said they have a very strong coconut flavor, but they are super mild to me.

It would probably be about 50% less. Coconut flour absorbs more water than most other flours.

Dude I can't thank you enough for this recipe. I was skeptical because I don't like parmesan but they have barley a hint if parmesan flavor. They remind me of tater tots, but without the crisp exterior. I've made them twice now. I'm planning on tweaking the recipe, just for fun. I'm Pinning, Tweeting and shouting from the rooftops, this recipe. It's the first low carb thing I've had that doesn't taste like health food.

Hi so nice but lupin flour is it in keto diet?
Definitely, look at the macros on it! Its basically all fiber. It's just not a common ingredient that most people use. I suspect this is because they dont know about it. It is very similar to peanuts and treenuts, so a small portion of people that are allergic to those can be allergic to lupin. Beyond that, I love the stuff.

You can use almond flour. It just doesn't produce as smooth of a texture.

Whatever you do don’t try piping it directly into hot oil-I had a little bit left in the bag and head oil ready for frying something else and I tried it and I got crumbs
Has anyone tried deep frying these ? Do they get crispier and with a crunch?
i haven't butttt... i tried a to deep fry a similar recipe and it literally melted on the oil, it was a disaster

Used Almond flour (maybe that was the problem) and my fries shrunk into little pieces🤦🏽♀️....I was so disappointed ☹️
They shrank? That's kind of weird. Was your dough really thin? Maybe the cauliflower was too wet. If you don't drain it all the way that could be a problem. They should form a crispy shell. I've used almond flour before I got my hands on the lupin. It "worked" it just had a grittier texture.

Yah you just want to cauliflower cooked. I didnt really specify how to cook it. Some people will use steam bags. Some people will boil it. It doesnt really matter how its cooked, but if you cook it in water then you have to get rid of the water. Itll think out the mixture quite a bit. That probably explains it!

19 net grams of carbs for 1/5 of a cup of lupin flour doesn't seem like a low carb food in my book..... carbalose flour on the other hand is only 2 net carbs for 1/3 cup. might try this with the carbalose flour
I'm not sure where you got your information, but it completely wrong. I've never seen anything measured in 1/5 cup measurements AND it is NOT 19 net carbs. In fact I have no idea where that number came from. All you would have to do is click on the lupin flour link in the description and look at the nutrition info on it. 1/4 Cup of lupin flour is 12 TOTAL Carbs of which 11 are fiber. This makes it 1 Net Carbs per 1/4 cup. I'd recommend looking at reliable sources to prevent the spread of misinformation.
Carbalose is known to spike blood glucose.
@@marcellecostanza1777 depends on the individual, so yes its best to test your BG b4 and after ingesting it to see how you respond. some people get a spike after black coffee too, luckily I'm not one of them.
