    Ingredients:
    560g / 19¾oz Strong white bread flour
    320g / 11oz Lukewarm milk around 40°C / 105°F
    1 large beaten Egg: at room temperature
    20g / ¾oz / 1½tbls Vegetable or Olive oil
    30g / 1oz Sugar
    1½tsp Kosher Salt or 1tsp Table salt
    10g / 2½tsp instant or active dried yeast, Fresh yeast is 20g / ¾oz
    25g / 1oz of melted butter for glazing
    Baking tin/pan, these are the inside measurements:
    12"x 8"x 2" or 30cm x 20cm x 5cm

    I love all the extra details you mention, like warming the glass bowl and how you measure the rolls and shape them. It's the little things that beginners (like myself) are often clueless about. Can't wait to give this a try :-)

    John, Really very,very good. Question: Can I half the quantities and get the same results. Only two of us! Or can you freeze them?

      Thanks for watching gerrysart, much appreciated. like you say, rather than half the recipe it would make better sense to freeze them and the best time to freeze is as soon as they have cooled from the oven, then when you need them microwave on the defrost setting, they taste just like they come fresh from the oven, you can do this with all of my bread recipes.       Very kind thank you.
      Just a little extra information to help you along if you do try these baguettes.
      Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help.
      1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
      2. Use digital SCALES for all of the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate.
      3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
      4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here ruclips.net/video/HWpSbYV96_c/видео.html

    Made these today John. They came out great! I've been fooling around with some different baking ideas, so far I love your presentations the best. I'm a retired mechanic, not a cook, but thanks to your videos, I am learning. Best tip of the day was to heat the bowl!!! This dough rose better than any I have done thus far. Has to be warming the bowl. I appreciate the fact that you add all those little tips. For us beginners that information is invaluable! Thanks again. Sorry for the long post.

    John I have tried this recipe and I don't know where it's gone wrong. I have never had a failed bread recipe before. They were fine until I proved the dough in the oven. When I took them out to stand on the bench for 10mins before cooking, they looked splendid. When I went to see to them after the standing time I was astonished. They had deflated and looked all wrinkled. I decided to try to cook them and they are like biscuits. They are in the bin.

      Over Proofing is the most common cause. If the dough is allowed to rise for too long before baking, it can overproof. This means the yeast has exhausted its food supply, and the dough has expanded as much as it can. When baked, the rolls may collapse because the gluten structure can't hold the gas bubbles.

    John I didn’t listen to you and I used cold milk! It took 2 hours for the first rise 🤣
    Also I’d like to thank you about the fan assisted oven tip. Mine is also fan assisted and I didn’t listen and set it to 180 but my rolls came out a little dark so I’ll try it on 160 degrees next time.
    They smell glorious!
    My sister heard you playing while I was in the kitchen today and now she says to me ‘are you listening to that David Attenborough of Bread’ 😂

    I've recently discovered that my oven has a "Proof Setting" which keeps the temperature at about 32C. I suppose I should use that instead of the other proofing methods. What would you advise? Thank you!

    Just making a batch for lunch. I make the soft sandwich rolls twice a week for grandson. He is now taking them for his school lunches. Until I watched your videos for the first time 7 months ago, it would not have occured to me to weigh the liquids! (I've had digital scales for years, so that was never a problem.) Everything turns out perfectly and the films are a joy to watch. Thank you for all your hard work making them.

    I made these dinner rolls today and they turned out wonderfully. However, I have a couple of questions and hope you can enlighten me. I do not use plastic wrap and missed it in the video if you explained what "oiled" plastic wrap is. Can you tell us why you use plastic wrap for these rolls, and how to oil plastic wrap?
    In the meantime, I just used a proofing cloth as usual, and the rolls turned out beautifully anyway. The tip about heating glass bowls and basting the finished rolls with butter were excellent! Thanks much.

      Thanks for watching F St much appreciated, You can add part whole meal flour I would say around one third wholemeal to two thirds white bread flour, but they wont be a light as all white flour but good enough.     If using fresh yeast would you do the same method or allow the yeast to foam be for adding the egg and oil.

    Tried plain flour with 4% of the flour weight replaced by VWG & they came out very nice, not bad and Aldi plain flour is 45p for 1.5 kilo which makes them very reasonably priced.

    John, I want to try these for our Thanksgiving meal. I would like to make them ahead of time and put them in the freezer, then thaw them and reheat for our dinner. Would that work? Or should I freeze them before the last rise and then thaw and cook on Thanksgiving day?

    Just made these but I turned them into 6 mini loaves by putting 3 'logs' of dough into 2 loaf tins. they came out Perfectly but needed about 5 minutes more in the oven. give or take.
    This is going to be a household favorite for the rest of my life! thank you John!

I saw your donut recipe already, it's on my list to make, I liked your tip of keeping the donut oil in a bottle just for using with donuts, so simple, but makes so much sense!     John, again this is my go to recipe for rolls. I am making two batches for a family reunion tomorrow. I am also smoking a whole pork loin and baking a cherry glazed Turkey Breast. Also I am making a dill, green onion, sour cream, potato salad along with a shoe peg white corn green pea salad. I am off today so guess who gets to cook?

    WOW Chef John all I can say is thankyou so very much, I have tried quite a few bread roll recipes by others and not successful, even though the stages were followed. I came across your dinner rolls by accident, made them and well the best rolls I have ever had. They came out exactly like yours and I put the butter on top and they were delicious, all gone, that's when I know they were good.

    Hi john, by the way here in states I'm having trouble finding bread flour higher than 6grams protein, I do use a non gmo flour which I love Maureen

      Is that 6 grams of protein per 100 grams of flour, or 6 grams per of protein per serving, in which case it should give you the serving weight??. And from what I've heard in previous comments, King Arthur's flour is the best non GMO flour for bread making in the US.

    Hello John. First time I followed your recipe to a tee and made the most fluffy and delicious dinner rolls ever. Another time I thought of using less sugar and you guessed it - big mistake. I make them and freeze them and any time i fancy one it's ready after 30secs in the microwave. Thank you for the fan oven advice.     Hey John! I made your baguette recipe and after 2 attempts, I had beautiful baguettes. Now I'm ready to tackle your dinner roll recipe. I have a couple questions before I start; Can you use a glass baking pan, instead of metal? And, can you make these ahead of time and keep in the fridge until you're ready to bake? Thanks much...

      I have never been a fan of leaving dough in the fridge, it's never the same, much better to bake them fresh, if you need to you can freeze these.

      Not sure what you mean this is a commercial yeast recipe, try my sourdough dinner roll recipe.
