Ingredients
2 eggs beaten
1½ cup almond milk (or milk of choice)
2 TBS melted butter or olive oil
Mix ingredients together and set aside
1½ cups einkorn flour
2 tsp baking powder
½ tsp sea salt
(optional) 1 tsp pumpkin pie spice or cinnamon
Directions
Mix dry ingredients and stir in liquid. Cook on medium high heat, waiting for the pancake to show bubbles before flipping. Sprinkle with choice of nuts and fruit on top and enjoy!
In my online recipe I added 1 TBS of sugar to make the pancakes thicker, however I found as I continued making this recipe, it was unnecessary. With einkorn it is always about the water. More water means a thinner batter and thinner pancakes. Less water; thicker pancakes. I have found that I can eliminate sugar in most recipes. These are my family’s favorite. Since I had to cut most fats, I chose EVVO as my go to fat source for baking.
Compare these to any pancake mix and einkorn wins in flavor, nutrition, and overall health benefits. When nutritionists say give up bread and flour, they have not entered einkorn whole grain into the equation. When you are eating einkorn, you are eating the most ancient wheat, and his wheat predates the time of Jesus.

Oh my, this was the best pancakes I've ever tasted in my life. It was better than ihop and Dennys combined. I added 1 cup of milk( grassfed) and 1 half of condense milk. Toped it off with bananna, agave, whipped cream blueberries, and strawberries added a tab bit of condense milk throughout. Im in heaven, a glass of milk with maca powder and agave

We just finished pancakes for dinner! I'm here doing research because I am ordering my first Einkorn in the next couple of days. I am using hard red and soft white wheat now. We made our pancakes with hard red wheat and I use the Mockmill. We use real maple syrup too, grade b, or newly called "dark maple syrup". Cute grandson, lol.
Let batter sit till it starts showing bubbles and pancakes with be fluffier.
nice recipe. i'd do without the bakin powder and use a scale to get my ratios correct in a stainless steel bowl, so i spend less cleaning up. Id do half of that with all purpose einkorn flour to give it a sweeter taste.
Please tell me the purpose of the baking soda
