There is no specific time to beat eggwhite to merengue , you are h ing difficulty maybe because of the utensils you use, make sure all the things that touches the eggwhite is grease free, wipe it with vinegar or lemon juice , use metal bowl or glass bowl, and the final thing is make sure that there is eggyolk in the eggwhite not a single drop or else it will not whip
It really depends on you if watch my mango swiss roll you will see that I use canned mango in there , canned mango for me lacks flavour . Give it a shot

I googled it and some poeple wrote that you only have a chance to find it in expensive organic grocery stores and even there is no guarantee to get it. Can't i use just regular cocoa powder or would it change the texture or the taste too much?
