Two questions if you don't mind Peter - Where's the movement number to identify these small Quartz Movements? And how do you know how to order a case fitting ring for a particular movement and case? Many thanks!
If you look very closely on the movement, you may need some magnification, most watches will be marked with both the manufacturers name and model. You can order a replacement with that info. If you are replacing the movement with one that is smaller or larger, or have lost the original holding ring, you will need to measure the dimensions of the movement and the case in millimeters to order a new ring. I simply 3D print new rings if I need them.
I need to have a SeikoVD53 movement in my Invicta. Has a date wheel and 3 chrono needles. How much more complicated is that for a jeweller. Do I have to expect to be charged an arm and a leg?

I successfully reached the step to taking off the watch hands. They have sprung off but I can't seem to get them to release completely from the stem. Any tips?

Be careful where you get it fixed, a less-than-honest jeweler will steal your genuine Seiko movement and put a cheap Chinese movement in its place.
Why did you set up the seconds hand so the that the minute hand will be 30 seconds out of sync every time the second hand reaches 12 o'clock?

Sounds like there may be a second hand involved. You will still need to Baer carefully pry them up and off.
If you are swapping the movement, the only thing you really have to worry about is not damaging the dial.
