I know everyone has mentioned it already, but the Hot for Food zucchini cream sauce is amazing! You MUST try it. It's honestly my new staple (I always have a mason jar of it in the fridge since the recipe launched)... for pasta and as a white sauce for pizza. And I was worried about the whole pickle brine thing, but honestly you can't taste it.

In Greece we don't make the traditional carbonara. we put milk cream instead of eggs. I find that the best substitute for that is coconut cream or milk!! Its even more delicious than the original! Thank you for the amazing recipes by the way, I made the vegan quiche for mothers day and my mother (not a vegan) loved it!
That sounds delish! Coconut cream is one of my fave things to cook with.
Anybody else love frozen peas? That first recipe was so good. Pasta is life. You should make homemade vegan pasta from scratch. It's life-changing. Don't get me wrong I love dried pasta but there's something therapeutic about making pasta from scratch.

I like that you do recipes that aren't with vegan fake products. as a non vegan I am more likely to try those than to try the vegan substitutes as I feel it's less tying to make it like the real one and the recipes end to be much more about the overall taste. TOo bad my kitchen is too small for me to have the patience to do all that

Made vegan carbonara a couple days ago which my not-so-vegan carbonara-loving bf reaaally liked. Cubed and marinated tofu in oil, soy sauce, liquid smoke and a little bit of sugar for the "bacon" which I later pan fried. I made the sauce using cooked potatoes and carrots, some oatcream, a little bit of water, onion, garlic, nutritional yeast and some salt and black pepper. 😊

Sarah, I just made the one using the sauerkraut liquid and wow, it was amazing. I made shitake bacon by cooking shitakes at 350 with liquid smoke and i also added black salt (as you recommended). I also made your cashew, nutritional yeast and salt cheese. I tagged you on instagram. Thanks for the inspiration and seriously, who knew that vegan carbonara could taste this good!
Instead of mushrooms try dried tomatoes. It gives that bacon/panchetta feeling.

Hey I use that same bacon, LOVE IT! Once I did some pizzas for my family with that bacon and they loved it as well.
Love it. Just a little opinion: I dont think it is unhealthy at all. Right, it is not "light", but It is healthy, fullfilling, and nutritious. So, very good!

I recently made a vegan mac sauce and used shiro miso to boil my carrot/cashew/onion in. It was hands down my most convincing! We always have miso on hand, and yellow mustard powder. I haven't thought of fermented brine tho.... also, I would love your cashew parm recipe!

Okay, so I tried the first recipe, but didn't have white miso, so I used brown instead... I don't know what the difference is when it comes to taste, but it worked really well actually! I sprinkled the dish with the dairy free cheese flavor sauce mix from Free&Easy to resemble parmesan and it reminded me so much of carbonara! And that is coming from someone who ate regular carbonara like a month ago... which says a lot, I think ;) Next time I'll try and see if I can find white miso paste, I bet it will taste just like the real deal then!
yumm! I'm so glad you enjoyed it. I actually didn't even know about the difference between red/brown/white miso until I looked it up for this recipe. I can't imagine it would make or break the recipe.

BTW I made it and it was the best vegan pasta sauce I have made yet!! The flavor was so rich it's shocking that it's mostly tofu. I used broccoli instead of peas and didn't use any oil. My non-vegan husband liked it too!!
Cheap Lazy Vegan made another carbonara recipe about a year or so ago out if cashews. I love that one too!

looks delicious :). if I made both, I like to add a lot of greens: Swiss chard, kale, etc. I made a commitment to go 95% vegan til the end of August. I had a little salmon . ckg to see if I can lose some weight and lower cholesterol. I'm stuck at 140lbs. so, not sure what to do. love your channel :). tks Sarah! !
It's really cool that you're challenging yourself to do that. :) Hope you reach your goals by the end of August. Greens would make a great addition to this dish! I usually like to add a huge helping of fresh veg into any pastas I make.

I love my pasta al dente too where it has a crunch (which drives my husband crazy as he likes it so mushy I can't even stomach it!). I've made a variation of this before with silken tofu and shiitake mushrooms crisped in the oven and it was pretty delicious. Forgot all about that recipe though and now I feel the need to revisit it! Yum

as long as you don't burn it you can cook with olive oil. Italian families use it a lot. I only cook with that at home because of it. (at work however I use cooking oil as it's cheaper)

There's a recipe for chicken tinga on serious eats that I think you can veganize using jackfruit. Tinga is a chipotle based sauce, I think you will like it.

5:40 cooking with olive oil is fine as long as it is not cold pressed. refined oliveoil can stand higher heats, cold pressed will burn quickly in a pan and increase cancer cance
I made the mushroom one, but added some coconut bacon I had already made way too much of for another dish. The whole family loved it.

You know what I'd love to see ? A video where you talk about the recipes someone should try when trying to reduce their animal products consumption. I'm trying to cut off animal products but it quickly gets boring because I don't know what to try. And I'm not convinced by tofu, I've tried it a few times and I haven't liked it so far :-/

I'm curious how you have tried tofu so far and if you ended up finding a recipe with tofu that you liked. Any of her recipes are good to try occasionally if you are looking to reduce your animal product consumption. Or even just small tweaks like using plant milk in recipes instead of cow milk. You don't have to have specific recipes, just tweak the ones you already use. Veganizing recipes can be super easy.
You could try to make a really fluffy vegan cake with f.e aquafaba cause in my experience vegan cakes tend to be really moist and dense (which isnt necessarily a bad thing)

I've made creamy carbonate using two type of creams and similar ingredients to your second dish. Both are really nice the first was by Oatly and the other was Alpro soy, however I live in the uk, so I'm not sure if you can get them in your country.
Interesting. I am not vegan but I never had spaghetti carbonara simply because I never liked the idea of the egg in the dish. *Shrugs* However, the homemade vegan version that you made looked really good. I wonder if adding some liquid smoke and (maple syrup?) to the mushrooms will give them a little of that classic smoked bacon flavor. I have had pancetta before and know it's not smoked...but it was just a thought.

Made the serious eats carbonara tonight and it was 🔥!!! I also made the "Parm" but just ground up crunchy fried garlic, cashews & salt (I don't like too much nooch per one dish) and OMG!!! This is a keeper!!!😳 I'm not vegan but I'm dairy & egg free, I prefer this over the original any day!👏🏽

Out of curiosity, how come you're not supposed to cook with olive oil? It's the only oil I've ever cooked with it because my mum taught me that it's the healthiest cooking oil
I've read that heating it above a certain temperature is not ideal. But some people say it's not that bad as long as you don't exceed its smoke point. IDK.
Izzi Seale I've heard that you shouldn't cook with /expensive/ olive oil, because it's sort of a waste of money. The pricey stuff has more quality flavor and is meant to be enjoyed as like a dipping sauce or whatever. Just cook with the cheapest olive oil you can find!
Extra virgin shouldn't be cooked. Olive oil is good for you
I personally don't use it for cooking just because of its smoke point. I prefer avocado or grapeseed oil for that. But in salads and as a drizzle it's delish!
Extra virgin means the oil was extracted without using heat, so cooking with it kind of negates that quality. Some oils also naturally have a low smoke point, the temperature where the oil starts to degrade and vapourise. Olive, sesame, coconut oil, you shouldn't really fry with them, but a light bit of sautéing won't hurt as you don't get near to that temperature.
