However, what's "disgusting" about the real thing is that it comes from a thinking, feeling creature which has been exploited or killed against its will, and that does not sit well with a lot of people. No creature should have to suffer for our *temporary* enjoyment. Hope that clarifies things! :)

l've tried both the carrot and tomato versions and also liked the carrot better due to the texture. The last time I added a couple drops of liquid smoke to the marinade and it was awesome . Also, you can usually find kelp granules at Whole Foods in the Asian food section. It comes in a little shaker bottle. And the flakes are really tiny so they blend in well . Great video as always ☺
Whoops! They actually both did require liquid smoke; for some reason just forgot it when writing the voiceover for that part. It was definitely a crucial ingredient.
if you can't find kelp granules, you can buy kombu/kelp/dashima (same seaweed different names) and just grind it in a food processor till you have a fine powder. It's so cheap and does the job.
I'm a pescatarian (I still eat fish) and am going vegan once I'm done with my last few fish foods in the fridge this month. Can't believe this is a thing, salmon is the only thing I'll be missing. Thank you thank you this may save my life! (And the fishes' :D)

Thank you SO MUCH for this recipe! I made the carrot recipe for christmas dinner (my family were having smoked salmon as an appetizer so it was the perfect opportunity). I added some dulse flakes in the marinade and used a mixture of olive oil and linseed oil. It came out amazing. I served them on blinis with cream cheese, red onion, fresh dill and a dash of lemon juice. All of my family ended up wanting to try it and they were amazed! I was so happy to show them that vegan food is magic deliciousness :D Thank you again!

For anyone wondering!: i did the carrot thing by putting a carrot in a plate with a bit of water and salt(just a pinch) and "marinated" it for just like 5 minutes and it turned out tasting GREAT and same texture and taste as salmon!!! Also, i was craving a bagel but had no cream cheese so i used an avocado with a pinch of sugar and S&P on it and there wasnt a big difference! Yummy
I tried the vegan carrot lox, and used flaxseed/grapeseed oil mix instead, and OMFG it's INSANE! 😍 I served it with a toasted multigrain bagel, plain sunflower seed cream cheeze (the closest I've found to "real" cream cheese, taste and texture), capers, a little diced red onion (raw), lemon zest, dried dill, black pepper, a little squeeze of lemon juice. It felt like the real thing ! I messed up the cuts of the carrots so it definitely looked like carrots 😂, but taste and texture was on par with the best lox I've had. It doesn't do well as a stand alone to be "smoked salmon", but with all the fixings, it's PERFECT.
I have been on a cream cheese hunt as well. And the closest I've found is Kite Hill (which is almond base). The chive flavor one is so super good. The texture is spot on. A little bit of an almond background flavor but can't really tell on an everything bagel (also agreed, best bagel). Can't wait to try this. Been really missing this breakfast and looking for an alternative.
You might try the carrot recipe, since that's the best texture, with the addition of powdered kelp, which adds a "sea" flavor? Just put a piece of kelp or nori in a spice/coffee grinder to make a powder. 🌱

You do not need to have ventilation to cultur your cream cheese. lactic acid bacteria do not need air, they happily grow in an anaerobe invironment! Great video! I'll definetly try these recipes!
i thought both tofutti and daiya cream cheese are really good substitutes and taste pretty much identical to the real thing. i'm obsessed with the herby blends they both have!
try the kite hill taste like the real thing the problem with the daiya original cream cheese it when I buy it it has the texture of ricotta cheese for some reason which is perfect for a lasagna but on a bagel.

Okay, I gotta be honest, I was like "mhmm sure sure" when she said "the mouth feel is very similar" but I just made the carrot salmon and holyyy fucking shit - it's insanely good. The mouthfeel IS so similar. Texture is spot on! I only used the oil, soy sauce and vinegar mixture as shown in the video but I'm thinking about buying liquid smoke to add next time and it would be bomb AF. You could be pescatarian! That's where I'm at right now. I'd say 95-98% of what I eat is vegan depending on the week but once a month or so I still have some sushi. Giving up meat was easy for me but fish will definitely be the hardest for me to quit, if I ever even can....
I completely understand. I was pescatarian for a long time, and I had a few false starts with veganism over a 1 year period, but once went vegan, I never looked back and I have no regrets. Find a vegan sushi bar and make vegan lox out of carrots.

I'll try both. I would like to be 100% plant-based, and that's my goal. If I find that I can't stay away from salmon which I eat maybe 2x per month, then I'll just do that. Thanks for the advice.
in order to make it more cream cheese like you must add lemon juice (fresh) or apple cider vinegar. the lemon with Provide the base for sourness and the apple cider vinegar will provide over the course of its transition a more powerful cream cheese flavor and smell. they work incredibly well together. I'd say adding about 1 tsp of apple cider vinegar 1 tsp lemon or more depending on your liking. love the vid.
I made the carrot lax just as you did and it turned out INEDIBLE because it was so salty! But on the second try I just boiled carrots in salt water, sliced them and then put them to marinade and it turned out fine
not homemade, but the tofutti cream cheese was something i found at the store one time and i thought it tasted pretty similar to actual cream cheese. the brand also has a good sour cream. i was able to feed snacks with both of these in them at my family's new year's party and it went over well! idk if the brand is just in the US or if it's in other countries, but it's something to try!

madeline vicioso use kosher salt it's pretty cheap usually $3 or less for a 3-5 pound box depending on where you get it, diamond usually has the bigger of the boxes for cheap. And this is what you would use it for, and salting water when boiling and such and save your good salt for finishing of dishes
If you make your carrots with rough salt, you can actually store the used salt in an airtight container. The way I prefer doing the carrots is to let them sit in an 0,8% salt water overnight (0.8dl salt in 1l water) and the next day boil the carrots in the same salt water until carrots are done :-)
That vegan lox sounds amazing! It's so hard to find vegan fish, especially anything that tastes like smoked salmon. I've been vegan for six years and lox is one of the things I really miss from the "before" days. I'll have to give it a try!

I got a similar result with red peppers! After grilling them, take off the skin and put them to marinate for a while (an hour I guess). I love it for my sushi version!

Toffuti cream cheese taste close enough to the real thing. I usually mix it with onions though as i never liked cream cheese on it's own. glad to see a home made one, not a fan of the processed vegan products with a million ingredients. there's a great brand of coconut yogurt usually found in NYC, Anita's. made in small batches and has less ingredients than the large brands.
After seeing your video with the super appetizing carrot "smoked salmon", I had to try it. I have to say, this tastes nothing like a bagel with smoked salmon and cream cheese. Good to try new things though and I appreciate the effort involved making these videos. Thanks for your hard work.
I need to give it another go! I haven't had it in a long time, since before I was even vegan. At the time I thought it was weird but maybe it's just because I was so used to the real thing.
I have found Kite Hill cream cheese to be the best store bought cream cheese alternative. It is also cashew based and is super close in taste to dairy cream cheese.

made the carrot lol and cream cheese, and finally got to try them today. It was amazing! I'm going to try just peeling and steaming the carrots next time though, this method seems a bit wasteful with all of that salt and using the oven for an hour and a half for 3 carrots. Thanks for posting this!
Now the carrot lachs I got them to taste more like salmon lachs but adding a couple of small sheets of dried seaweed and it gave me such a sea taste to it. Came out great. Loved your recipe. Never tried tomato, the carrot is good enough for me.
These things confuse me. If you go vegan, just eat vegan things? why mimic the flavour of meat when you could just eat something made or modified to be vegan? it tastes way better than weird knockoff salmon

You do not need to have ventilation to cultur your cream cheese. lactic acid bacteria do not need air, they happily grow in an anaerobe invironment!

try the kite hill taste like the real thing the problem with the daiya original cream cheese it when I buy it it has the texture of ricotta cheese for some reason which is perfect for a lasagna but on a bagel.

Okay, I gotta be honest, I was like "mhmm sure sure" when she said "the mouth feel is very similar" but I just made the carrot salmon and holyyy fucking shit - it's insanely good. The mouthfeel IS so similar. Texture is spot on! I only used the oil, soy sauce and vinegar mixture as shown in the video but I'm thinking about buying liquid smoke to add next time and it would be bomb AF. You could be pescatarian! That's where I'm at right now. I'd say 95-98% of what I eat is vegan depending on the week but once a month or so I still have some sushi. Giving up meat was easy for me but fish will definitely be the hardest for me to quit, if I ever even can....

I completely understand. I was pescatarian for a long time, and I had a few false starts with veganism over a 1 year period, but once went vegan, I never looked back and I have no regrets. Find a vegan sushi bar and make vegan lox out of carrots.

I'll try both. I would like to be 100% plant-based, and that's my goal. If I find that I can't stay away from salmon which I eat maybe 2x per month, then I'll just do that. Thanks for the advice.
in order to make it more cream cheese like you must add lemon juice (fresh) or apple cider vinegar. the lemon with Provide the base for sourness and the apple cider vinegar will provide over the course of its transition a more powerful cream cheese flavor and smell. they work incredibly well together. I'd say adding about
1 tsp of apple cider vinegar
1 tsp lemon or more depending on your liking.

I did end up adding some lemon juice, nutritional yeast and herbs and it was so good! Next time I'll try the ACV.
I made the carrot lax just as you did and it turned out INEDIBLE because it was so salty! But on the second try I just boiled carrots in salt water, sliced them and then put them to marinade and it turned out fine

not homemade, but the tofutti cream cheese was something i found at the store one time and i thought it tasted pretty similar to actual cream cheese. the brand also has a good sour cream. i was able to feed snacks with both of these in them at my family's new year's party and it went over well! idk if the brand is just in the US or if it's in other countries, but it's something to try!

Maria McLaughlin it is better to consume within one week~~ but I left my yogurt two week and it just more sour than the first time you made. Still ok to consume.

madeline vicioso use kosher salt it's pretty cheap usually $3 or less for a 3-5 pound box depending on where you get it, diamond usually has the bigger of the boxes for cheap. And this is what you would use it for, and salting water when boiling and such and save your good salt for finishing of dishes
If you make your carrots with rough salt, you can actually store the used salt in an airtight container. The way I prefer doing the carrots is to let them sit in an 0,8% salt water overnight (0.8dl salt in 1l water) and the next day boil the carrots in the same salt water until carrots are done :-)
Salt is so inexpensive, though. You're not wasting it if you use it to scrub shower grout or cast iron pans afterwards...
That vegan lox sounds amazing! It's so hard to find vegan fish, especially anything that tastes like smoked salmon. I've been vegan for six years and lox is one of the things I really miss from the "before" days. I'll have to give it a try!

Thank you! I lost my vegan lox recipe recently. I grew up Jewish in a Jewish neighborhood, and loved lox and cream cheese on a bagel. Having made the carrot lox (w/liquid smoke), I can testify that it is as good as the real lox. I was kvelling!

Toffuti cream cheese taste close enough to the real thing. I usually mix it with onions though as i never liked cream cheese on it's own. glad to see a home made one, not a fan of the processed vegan products with a million ingredients.
there's a great brand of coconut yogurt usually found in NYC, Anita's. made in small batches and has less ingredients than the large brands.
Oh my goodness, these smoked salmon substitutes would be perfect in a sushi roll as a substitute for salmon and the same for the cashew cream cheese

I need to give it another go! I haven't had it in a long time, since before I was even vegan. At the time I thought it was weird but maybe it's just because I was so used to the real thing.

I have found Kite Hill cream cheese to be the best store bought cream cheese alternative. It is also cashew based and is super close in taste to dairy cream cheese.

made the carrot lol and cream cheese, and finally got to try them today. It was amazing! I'm going to try just peeling and steaming the carrots next time though, this method seems a bit wasteful with all of that salt and using the oven for an hour and a half for 3 carrots. Thanks for posting this!
Now the carrot lachs I got them to taste more like salmon lachs but adding a couple of small sheets of dried seaweed and it gave me such a sea taste to it. Came out great. Loved your recipe. Never tried tomato, the carrot is good enough for me.
