      Hey, that's my recipe!! Great job and thanks for trying it!!. Forry for not being more detailed...I coat the tail in the candied zest and some S&P, then sautee the tails in butter. The BIGGEST thing I may have left out was to crush up the zest to a finer powder so it coats a little better (either a coffee grinder or mortal/pedestal)...almost like kosher salt sized granules. Then when it's done,. top/cover it with the butter you used to sautee it or a little extra drawn butter on top. The butter just adds more richness to cut through the candied orange zest.
      Oh, and I've used aluminum foil in the past...definitely parchment paper next time :D

    If you’ve never been to the keys and seen what a windy boating nightmare it is, especially in the winter. You wont appreciate how incredible of a day this is

    Scouting is one of my favorite things to do. A little marking tip that we use. Name your bigger marks with something descriptive that will clue you on what's there and mark the small spots with just the numbers. That way you see names for big holes and numbers for little holes.

    Now thats a slicker, sooooo clear , love the search areas where you dont have any , still cant get used to the tiny helm.
    Try the parchment paper and dont dry it out completely, coat the top and press it in and let the broiling do the final caramelization, other options are sour orange , mango and key lime.

    Thank you for taking us on your adventure! It reminded me of my offshore charter days even after fishing over 200 days a year for years I always got so excited when we booked a 12 hour trip I would not be able to sleep..It was so much fun getting way offshore and search for new spots. Always go to new areas and usually find enough to make the trip if not I had some get well mangrove and gag holes. Just absolutely loved searching 40-50 miles offshore. The small rocks were the best no one else except God knew they were there. Have caught hundreds of grouper and snapper on those little ledges. Just brought back some great memories. Thank you brother!!! Always look forward to seeing you!!!

    As usual, awesome video! Since you are taking recipes. This one is very simple, but I will say it will blow your mind. I split the lobster in half, keeping the head and tale intact. I stuff grouper in the head part, cover with garlic butter, and put it on the grill shell side down until completely cooked. I do not flip. The grouper takes on the flavor of the lobster, and it is delicious!! Enjoy

    Those couple days two weeks ago were awesome. It was like an aquarium off of Sawyer. Did the exact same thing as you did in this video and took advantage of the crystal clear water to find new spots.

    You should give the style of snare that is a simple loop on a stick a try, without the spring loading feature of the green one. You can often slip it behind a lobster under a crevice and pull in a single motion without needing to tickle them out to open it up behind them. Great video as always!

    I like Madelyn’s salad idea. Some spinach, cranberries, feta, sunflower seeds, some almonds slices or pecans or walnuts, a citrus or raspberry vinaigrette. Drop some chunks of that candied orange covered lobster on top. 🤌

    Another Great Video Aaron! You are definitely the "Bob Ross" of Diving! I was thinking... in your recipe add grated ginger and the thinly sliced white parts of green onion, and use the thinly sliced green parts for garnish.

    I dragged my boat to Marathon for a week of lobstering and mahi. The weather was great, except for some passing showers. It was late Sept. We were north of the 7-mi bridge and found no ledges anywhere. All were apparently filled in with sand from previous years' hurricanes. There were four of us hunting and desperately searching to no avail. Going to the Northern Honda Keys was about 20 mi. Not worth it to roll the dice on finding any, as it was late in the season. Obviously, my area was picked already, In years past out of Big Pine Key to the north was very productive. I'll probably never go to the Marathon area again.

    You gotta try fried lobster. Works well with warm water tail. Seasoned flour ,buttermilk, season flour with a lil cornstarch in it. Serve with wine joe crabs sauce. Fire!!

    Brings back memories. When I was a boy living in the keys in the early 70's, someone had placed a bunch if car hoods out in an area and they were always full of lobster. I'm sure nowadays that's illegal.. Thanks for sharing your day.

      I too grew up in old Miami (Palmetto 78✌️) and it was a special time to be there. Watching Coconut Grove growing from the Boat show at Dinner Key and then the hippies and then the leather boys 😒
      And now the $$$$$$
      I remember back in the 70's and my brother working at Tackle World in South Miami with Mel Shapiro.

    And therein lies the question..... yes, there are but a few legal lobsters at this time of the season due to pressure from commercial and recreational, but why isn't there still a crap load of undersize lobsters on those ledges?

    Try these recipes on:
    Smoked King Meatball Subs - just how it sounds. Tight meatball with only enough egg and bread crumb to hold it together. Sear it in olive oil and pour in Red pepper marinara. Provolone melted on a good roll. YUM!
    Trigger Green Curry and Jasmine Rice - Maesri Green Curry paste, coconut milk, fish sauce, sugar, salt, lime leaves, lime juice and Thai basil - cook carrot, trimmed snow peas in sauce til fork tender - add raw Trigger & Zucchini or Eggplant. Simmer for 4-5 mins. Serve that mouth-gasm on steamed Jasmine Rice. Any firm fish will do.

    If you ever make that dish again, save the infused simple syrup and use it in cocktails, homemade Italian sodas, etc. I’m sure it would be killer. Love the vids!

Hard work always pays off while most viewers want the “Now tell me the best place” attitude, so I can sit on my f#t a#s and reap the rewards of your hard work. Sad but accurate view of all the ones who keep asking “why don’t you say where you are”. Lol. The lobster dish may have been ok for some, but likely not for all. Just like your 2 reactions. However, before you say no, try the recipe as presented… get parchment paper.

    Pretty cool. I make my own snare/tickle stick with wire and a random wooden stick when I'm traveling abroad if Lobstering is allowed. Those fancy snares are too long to travel with, but they sure are awesome.

    Lobster goes well with coconut. shredded coconut in reduced coconut milk. Brown off the fresh shredded coconut lightly in butter finish with garlic paste and a little lemon. deglaze with coconut milk and white wine reduce to half. Pan sear the half tail then pour the coconut sauce on before baking for 5-7 min. Top with fresh lemon juice and zest.

    Great video! I recently noticed the lobsters with the gray mark on the underside of their head always have orange (I’m guessing the beginning of eggs) in their heads. I try to let those go now whenever I find them

    Awesome video! So fun to find new spots and those ledges look awesome!
    Question: (I believe I know the answer based on how careful u are, but others might have heard the same thing) The guy who taught me to lobster would break an antenna in half on shorties so he could distinguish them easier and not catch again, believing they would grow back. Assuming from your careful handling you believe that would disable/doom the lobster?

    You should have kept all the syrup. That's where the sweet orange flavour was. I would have brushed the syrup on every minute it was in the oven then topped with the crunchies.

    Another great video. Your new boat looks perfect for what you're going after. I'm curious, you're gheenoe ledges, do you find any slipper or shovel nose lobster on them. Here in Sarasota we find them mostly in swiss cheese bottom. Keep up the awesome work my friend, stay healthy!!

      it surely is! and on very rare occasion, I've only caught 3 in the 10 years I've been here. actually saw one the other day on a coral head but it was super small.

    I would suggest for the lobster quite a bit more Orange zest... I would reduce that simple syrup a little further...so it thickens a little more and and cling to the orange zest a little more...I would still do the Seer but instead of cooking it meat side up..I would cook it meat side down on top of the zest...once in the oven....so the flavors can permeate totally through the lobster. Carefully flip it over and broil it for a few minutes.

    chunk the raw lobster up, saute it in a little of the simple syrup and zest with a little garlic. Coat the lobster pieces in the thickened simple syrup
