Yes, the egg yolk batter is thin because only a little flour is added. The beated egg white will drop when turning the bowl upside down, so that the cake won't crack during baking. And it is absolutely normal that the cheesecake will shrink in size after baking.

I am not sure what you mean by home oven. I also bake at home, so you could simply follow my recipe if your cake tin is the same size. If you use a smaller cake mold, I would suggest you reduce the temperature by 10 degree at each stage, so that the surface won't crack. Good luck!
@@YuCuisine. Commercial oven has upper or lower fan n exhaust function which is insufficient in home oven. Maybe I am wrong. 😊 😃 . Since u are using a home oven then I willl just follow the temperature setting as mentioned by u.Thanks

今天做了这款蛋糕,家里剩下的茅屋奶酪没地消化,放了进去,,结果有一点不平滑,但是非常柔软,特别好吃。不过出炉前忘记焖了,下次一定记得。加了柠檬汁好清爽!

烤箱由160C,降至120C,中間過程如何處理?馬上設定120C 繼續烤?或等溫度降到120度再烤?可否打開烤箱門加速散熱?
可以把烤箱门开几秒钟散热,或者丢几个冰块在水里

烤这个蛋糕的时候我用的是ZUG,普通嵌入式,有上下火,但上下火不能分开调温。轻乳酪开裂有可能是蛋白打太硬或者温度高了,烤的时候放在烤箱下层,顶部可以盖锡纸防止烤焦

配方很好 今天试了第一次 除了我的烤箱温度有点高 导致临近出炉的时候有部分开裂(冷却之后又回去了一点点 不影响美观)味道很棒 秒杀店里的日式轻乳酪蛋糕 乳酪味道浓郁(不过我的柠檬汁倒是没什么味道 哈哈)

按着方子做了,除了开裂很成功,味道不错👍
开裂可能是蛋白打发过度或者烘烤温度高了,下回调整一下试试看

如果高度相同,10寸用量大概是8寸的1.5倍。我没有烤过那么大的,时间你先按这个烤,如果没熟的话再加几分钟

Could be shorter, but I never use such high temperature to bake light cheese cake as it could easily get cracked
我用6寸蛋糕模,份量減半,焗的時段都漲起的,但到最後留條縫待20分鐘後,就縮回去
就變成肩平了,請問出現了什麼問題
没问题,乳酪蛋糕烤完都会回缩的,完全正常

用的活底模具,包了两层锡纸,脱模基本还比较工整呢。没有🍋,用的本地的酸柑,味道也挺不错的。有机会试试其他水果口味比如百香果芒果吗哈哈
就是顶部开裂了,怪我温度一开始160度后没有及时降温到130这类低温一些的😭
不过狡猾的我筛一层糖粉上去就看不出开裂了🥴

你好老师,请问预热要多久?还有如果whipped cream本身已经带糖了,糖量需要减少吗?
预热大概要15分钟左右,如果你有烤箱温度计最好。这个蛋糕不怎么甜,就算不减糖问题也不大。或者你可以把cream里的糖份减掉,在加蛋黄前尝一尝甜度

你注意到是什么时候裂的吗?是降温前还是降温后?有可能你的烤箱温度偏高。如果是后半段裂开的,可能温度没下来,调低温度的时候把烤箱门打开5秒试试
