- Japanese Souffle Cheesecake
Ingredients: (20cm diameter round cake mold)
200g cream cheese
5 eggs
100g cream
130g plain yoghurt
50g cake flour
80g sugar
20g lemon juice
Preheat the oven to 170C/338F
Water bath method
Bake at 160C/320F for 20 minutes
then reduce the temperature to 120C/248F, bake for 60 minutes

So soft and delicious! Reduced the sugar to 70g since my family don't eat sweet that much. Addition of lemon juice really help. I will cut the sugar to 60-65g if making original/vanilla cheesecake. Will bake for extra 10min next time to make the surface dryer since the top stuck to the pan when i wanna removed the parchment paper

我做了,第一次做蛋糕,就选了这款,一次成功!这个食谱很好,解释的也细致,感谢!我用的九寸蛋糕盘,所以调整了一下,6个鸡蛋,其余材料都以鸡蛋比例同比增长!也是用的all purpose的面粉!衷心感谢博主的分享!

按着方子做了,除了开裂很成功,味道不错👍
开裂可能是蛋白打发过度或者烘烤温度高了,下回调整一下试试看

今天做了这款蛋糕,家里剩下的茅屋奶酪没地消化,放了进去,,结果有一点不平滑,但是非常柔软,特别好吃。不过出炉前忘记焖了,下次一定记得。加了柠檬汁好清爽!

Yes, the egg yolk batter is thin because only a little flour is added. The beated egg white will drop when turning the bowl upside down, so that the cake won't crack during baking. And it is absolutely normal that the cheesecake will shrink in size after baking.

你好老师,请问预热要多久?还有如果whipped cream本身已经带糖了,糖量需要减少吗?
预热大概要15分钟左右,如果你有烤箱温度计最好。这个蛋糕不怎么甜,就算不减糖问题也不大。或者你可以把cream里的糖份减掉,在加蛋黄前尝一尝甜度

如家中只有10吋模,分量和時間應怎樣調整,謝謝?
如果高度相同,10寸用量大概是8寸的1.5倍。我没有烤过那么大的,时间你先按这个烤,如果没熟的话再加几分钟

老师请问可以减糖吗?比如80g减到50g的分量
这个配方,我已经减了1/3的糖了,柠檬、原味酸奶和奶酪,这三样都是酸的,再减糖口感会不好
