This is a very labor intensive recipe, so if you make this for anyone, they better appreciate it. Great recipe for chocolate moon cakes, and a rare one!
So a nontraditional version: What I see is a basic truffle mix heavy cream + gd chocolate 50-50 ratio allow to set firms up and make balls for the center, covered in a lotus filling that has chocolate added to desired taste color and texture filling to cover the truffle ball and finally the chocolate snowskin dough that is cooked in 2x boiler and uses shortening firm at room temp rather than an oil dough that is cooked:chocolate powder, powder sugar and gao fen is = glutinous rice flour used in traditional snowy mooncakes for elasticity. They dont show it cooked but the rice powder has to be cooked or it will taste bad- not sure if they are using precooked so this is giving a very vague idea but to mooncake chefs I'm sure they can replicate it but not the average no experience person. Sounds like it was a recipe that came with some sort of kit they were selling at some point but no longer/
