The Man from Snowy River stunt is performed by the actor, not a double. However, all the trees on that slope were dug up and replanted at a 20 degree lean, the actor was trained to lean right back in the saddle, and the camera was angled to match the vertical.
This doesn’t take away at all from what is an excellent practical effect and an impressive stunt performance by Tom Burlinson.

I've been saying this since the early days of this series. Wrestlers are stuntmen that do all of this on an almost daily basis in front of an audience. It would be really interesting to get their take on the stuff that they do in the ring but also stunts in movies and see how they might approach it versus a traditional stuntman. I've seen Gui in the audience at shows and I'm pretty sure he's friends with Swerve so it would be cool if he could convince them to do an episode.

A significant difference between the two drunken fights is that Jackie Chan was using a specific style that was established in the original Drunken Master (1978), the Eight Drunken Immortals technique:
Lu Dongbin = the drunkard w/ inner strength [Jackie also plays him in The Forbidden Kingdom under the character's birth name]
Zhang (Chan) Gualao = the drunkard w/ the swift double-kicks
Lan Caihe = the drunkard w/ the sudden deadly waist attack
He (Ho) Xiangu = the drunken woman flaunting her body
Li Tieguai = the drunken cripple w/ the powerful right leg
Han Xiangzi = the drunken flute player w/ the powerful wrists
Cao (Tso) Guojiu = the drunkard w/ the powerful throat lock
Zhongli (Jun) Quan = the drunkard holding a pot in his arms
Drunken Boxing itself is a subset of many styles of ancient kung fu, but JC was the one that made it iconic in the modern world.

Also, the character of "Beggar So", who teaches Jackie the 'Drunken Boxing", in the original Drunken Master (1978), is based on So Chan who was a famous Kung Fu master and teacher of the legendary Wong Fei-hung.
The legend says, that So Chan had developed a serious drinking problem and had the idea to modify existing Kung Fu techniques, creating the "Drunken Boxing/ Drunken Fist" style.
Jackie & Yuen Woo-ping created then the movie version of it, because there were only depictions of the style in some old training manuals, but they couldn't find somebody who actually practised it. Fun fact: "Beggar So" is played by Yuen Woo-ping's father, Yuen Siu-tien, who was a famous actor in Kung Fu movies.

The Man From Snowy River is based on a really old poem from Australia. It is about a herd of wild horses called brumbies which are lead by a black stallion and the events that lead up to the capture of that herd. In the last scene the brumbies have gone down a really steep slope to avoid capture which is extremely dangerous to do when you are riding on horses. All of the guys other than the "man from Snowy River" stop at the top of the slope because they do not want to risk their lives but one does go down after the brumbies and actually does manage to snag the black stallion which results in the capture of the herd. The risk that the man took to capture the brumbies and claim the reward is what makes him the hero of the poem and shows the amount of skill and bravery that he has (or the lack of brains if you will lol).
The fact that they do not show the horse rider going down the entire slope in the movie shows how dangerous it actually is and I would imagine that the horse riders/stunt men would have not done it on a full scale regardless of how much they were offered. I would expect that the slope used for the scene was actually just a really short slope but framed in a way to hide that fact. I have gone down a short steep slope on a horse at relatively slow speeds and it is still a really scary (and dangerous) experience especially if you are not expecting it but it is still easily doable if you are experienced enough.
