You Can put it in water, but don't any leafs touch the water because then it goes bad. Also put plasticwrap over it.... We do it where I work and the mint stay fresh in the fridge for 3-4 weeks.
Yes, this also is a way to keep it fresh. From my experience, an excellent sealable container and a wet towel have always been the choice for bars where I worked. I guess it is personal preference and storage space issues as well. I find out not everyone keeps on top of the game, and usually, the mint starts sinking into the water if not looked after.

Way wouldn't you use freeze suppression, gas pressure, or Infusion to extract the mint flavor instead of using metal on the veins?
These techniques are great and will be covered at some point but is good to cover every possible way starting with the simple one.
