Paneer, mushrooms go well, pineapple grills so well and with coconut icecream, if nothing some nice homemade coconut sauce to go on top(think mango with sticky rice topping).

Who would have thunk it, french toast on a skewer??!! The slight carmelization (not burnt!) must give it a different and wonderful flavor. Great ideas, can't wait to try some out! I like your skewers, I'm guessing that blade probably holds items more securely, food doesn't rotate while grilling like my rod style ones. Where did you find yours?
I bought mine at a local kitchen supply store, but just the other day I saw some nice stainless steel ones at the grocery store by the brand OXO. Those might be a good option and I think you can find them on Amazon!
Good tip about putting like items on the same skewer! That never occurred to me but it makes so much sense. One thing worth noting…don’t smoke veggies! I tried to use hickory once to smoke veggies & it’s my only food-failure to date! My wife & kids still remind me of it.

French Toast! Can't wait to try that. I make kabobs all the time but would never have thought of that! I love mushrooms on my kabobs and the raspberry/walnut type dressings make great marinade for beef😊
A raspberry dressing sounds amazing! My mom used to buy a raspberry chipotle marinade that I loved... I might need to try and re-create that! Thanks for commenting! 😁
I go with stainless, years ago we had bamboo ones, soaked a dozen of them in water, only used 1/2, let the extras'dry' over night and put them away the next day, months later I had the biggest wad of MOLD you've ever seen.. yeah, stainless is the way to go... LOL
Awesome recipes and the tip about keeping like items together when grilling. I can think of a day at the beach camping with a whole day of grilling with coal with just skewers and a pie iron maker. Don't need a whole lot to pack, some corn, fruits, bread, tortillas and cut veggies and some sauce.
Everything looked sooo yummy 😋. I'll have to try the French toast. A real quick and easy I like to cook is Cajun season shrimp with onions and peppers and a side of dirty rice. 🍡🦐

Didn't know you needed to soak wooden skewers, as we had steel ones in my parents' house. I was about to smoke my food from the inside... You saved me

I tried bamboo once, didn't care for them. Quickly bought metal. Ugh yuk, about your experience!
