So, being able to share something that is lethal to others and have it be perceived as akin to marmalade...yeah, it kinda makes a twisted sense to use that as a greeting.
Now we know why Legoshi is so reserved and why people sees it as weird. Canines are supposed to be extrovert, but reptiles are introverted, reserved, legoshi took after his grandpa, but as nobody (apart from Jack) knows he is part reptile, people get confuse. Maybe that's why Jack knows him so well, he knows he is as reserved as a reptile.
Dragons are like one of the most chill monitors and reptiles out there. Adult ones don't have that prey instinct which is one of the harder factors when trying to tame a reptile

I had a good relationship with my grandfather before he died. After the rest of the family abandoned him, as a teenager trying to move out on my own, I came to see him often and realized how alone he was. After he passed away, I had a dream a huge ball of energy came to visit me; it floated into my bedroom and just floated over me, it was so warm and friendly, then I woke up. He tried to help everyone in our family and they just rejected him. I was the only one who really cared.

From what I read in the manga, Legoshi as you said has the personality of a cold blooded reptile. Plus, his personality trait of liking another species comes from his Grampa who was into wolves.

Fun Fact about Komodo Dragons: Their venom is more or less a vestigial trait. They evolved from venomous ancestors and simply haven't really been around long enough to fully lose their venom. The larger an animal gets, the less effective venom becomes as a hunting tool(the bigger the body, the longer it takes for venom to kick in, and when you hunting potentially large and dangerous prey, you don't really have that time). Hell, Komodos don't even use their venom primarily, and instead bring down prey with sheer power, the venom is just a bonus that cause chip damage. Most examples of Komodos "Biting and letting their prey go" are just examples of failed hunts.
It's not really surprising people tend to associate them with being monstrous. A creature so deadly that even a failed hunt is almost certainly lethal does sound like it's out of fantasy. It also makes sense then that it's a bigger deal in this setting, if only because most of the animals in Beastars are closer in size. I mean, relatively speaking - a Komodo Dragon is WAY bigger than a grey wolf (about 2-3 metres as opposed to 1-1.5 metres long) but Legoshi's grandad is only a little taller than him in this clip.

This brings back memories of my grandfather. I have such wonderful childhood memories of him and he was a fantastic grandfather. Granted he had his flaws and he did things near the end of his life that seemed like he was trying to get himself exiled from the family. He even tried to kick my grandmother out of the house and on the street, even though there was no way my dad and his siblings would allow it. But he definitely tried and turned into a very bitter person near the end. That doesn't erase the fond memories I have of him when I was little. Even my grandmother still says to this day that regardless of his flaws and the things he did, he was a wonderful grandfather and provider.

He lost both his parents at a very young age, got sent to live with a relative who didn't want them there in the first place, and basically had to raise his 4 younger siblings. He also developed a drinking problem and was an incredibly cheap person, always hoarding money, and always looking for any excuse to not spend money. Yet somehow he was never abusive. Never struck my Dad or his sisters or my grandmother. I have no idea why he essentially tried to exile himself from the rest of the family. My younger brother doesn't really have many good memories of my grandfather because he was so young still by the time he, in my brother's words, "abandoned" us all in California to go back and live by himself in Mexico. So he never got to experience how wonderful and loving a grandfather he was. He just got to really know the shell of a man he had become in his later years.
Sounds like dementia, when it's early, it changes your personality for the worse. Some people hit their spouse or become paranoid. Your grandfather wasn't at fault, he was sick.

Even going as far as thinking that me asking one time for how long he would be visiting, was my sneaky underhanded way of telling him that I didn't want him here. He was also an alcoholic and there were times where he would make snide, backhanded comments about my cousins' grandparents just because he didn't get along with them when they were alive.

This is really random, but as someone who’s 1/4th mixed this scene struck a cord with me. My paternal grandfather is Punjabi Pakistani, and I struggle to connect with the culture. I think that’s a common struggle for people who are 1/4th, but one way I like to is through food. Legoshi describing the venom “like a bittersweet marmalade” feels oddly real to me for an anthropomorphic wolf.

Leogishi's mother was half wolf, half komodo. Legoshi was born a quarter komodo making him immune to their venom.

This is really random, but as someone who’s 1/4th mixed this scene struck a cord with me. My paternal grandfather is Punjabi Pakistani, and I struggle to connect with the culture. I think that’s a common struggle for people who are 1/4th, but one way I like to is through food. Legoshi describing the venom “like a bittersweet marmalade” feels oddly real to me for an anthropomorphic wolf.
