Two thoughts from a fellow mule lover/horse starter, recommend not using the martingale/tie-down until he's a little further along. You've got pressure on all sides, the leg, the top (your seat), and the mouth...letting him keep a normal head carriage/movement when they're first starting out helps them to stay calm. Give him an out. Second, right about 4:10 (maybe earlier)...he stops blinking. Mules tend to be more stoic than horses, but no blinking is a sign that they've stopped thinking...processing. Next step, wait for a deescalation...a lick and chew or exhale. Giving them something they're already confident in doing will get you where you want to go faster in the long run. Love to see people working w mules.
You need to trust him, too. When he stops, quit pulling on his mouth, relax your legs all the way up to your thighs. Y'all gonna be fine, just keep at it.
If his mouth is that hard, you should try to ride him in a Hackamore! Everything in a mules world is about being safe and protected. Their nose is their most vulnerable sensitive place. I have riding donkeys and have had several mules and everything I teach them is through pressure and release on their nose. Doing good just keep being his body once he trust you he’ll do anything for you. Also, you need to put a back cinch tight on that mule. On a mule or donkey the rear cinch is more important than the front. If you only had one of the two to choose from with a mule, you would want to use a rear cinch! Last thing, watch Steve Edwards’s videos, queen valley mule ranch, you’ll learn A LOT,, he knows his stuff

Keeping the pressure on teaches them to be hard-mouthed. Like you said, gotta release that pressure when he stops!
