The best showcase of power is gonna be Kokushibou's (upper moon 1 from demon slayer) why? First we gonna talk about mist hashira , the kid who become hashira in about 2 months of holding a sword , he was smacked by upper moon 5 but then he awakened his mark and 1 shouted Gyokko , after that he joined the hashira training and learned how to use his mark very well and got stronger cuz he is talented , layer facing the upper moon 1 he felt the power of that monster and then quickly activated the mark but he standed no chance against him , later on Sanemi arrived and he would never do better muichiro with no mark , stone hashira came to help and after some time they managed to rip Kokishibou upper fit (i cant call it a shirt idk what to name it ) Kokushibou used a skill so fast and so strong that he managed to cut 2 of Sanemi's fingers , and Sanemi said that if stone hashira didnt redirect the hit away he would have lost his whole hand ...... and the fight goes but im so tierd to complete .

Though I'd argue Ranga's Death storm, Milim's Drago Nova & Dragon Buster, Albis's lightning attack etc.etc are the best displays of power in the series. Mostly side characters, I don't think Rimuru ever showed any impressive looking power.
Defending against clayman's army was the best showcase of power in the series. Benimaru's commanding skills and others fighting skills were shown very nicely.
