- After a big week at the Montebello Islands, we decided to head out for one last crack at the Snapper before the season closure. It sure pays off, as the fish were hungrier then ever.

To stop the skin shrivelling, cross hatch with small slices to create a “pineapple effect”.
If you’re on land and in the kitchen you can also pour boiling water over the skin. It’ll remove any slime (not much of an issue with pink snapper) and preshrink it. Leave it skin side up to dry for a minute or two. Will still shrink though because that’s the nature of fish skin (diff species do diff amounts)

Cut the skin brother in little scores, add bulk salt. Skin side down first, and use some butter BOOM! Now take me out for a flick ya daaawwwg live in Freo x

Fill your bottles with salt water an freeze if they leak it doesn’t hurt the flesh, they stay colder for longer aswell. And hold the fillet down with a spatula for 5-10seconds an the skin will stay flat an not curl up

Yeah for your question.... as soon as you put fish on hot pan you gotta press with spatula or flat pan between 10-15 secs. That will stop them from curl up...

Love your Video, to stop the fish from curling, cut the skin first in sections across, add salt to the cuts, then place fish skin down first for 3 mins, then turn and cook meat side for 2 mins, if fish is thicker add a couple of minutes more , no longer and then enjoy,,,, use good olive oil and spoon of butter, no better than that....you can cook fish with a spool full of vinegar if no cooker,,,,,,

Make sure skin is dry and as soon as you put it in the pan put pressure on with a spatula or tongs if that’s all you have. It will release after a few seconds and stop trying to curl itself up

Ok, so you said you killed it by spiking it then you said stand the fish up and let it bleed with gravity and the heart pumping, so i guess my question is, did you spike kill it or not.
The iky stops all brain function instantly mate and if it's done quickly the heart will pump for a minute or so allowing the fish to bleed. There is some good vids getting around on RUclips. Cheers

If you score the skin with a sharp knife that stops it from curling up as bad.

Most areas only 4-5km from the main land mate. 7-11mtrs of water is a great depth for a mixed bag
Score the skin ( 3 or 4 one mm cuts) and the skin will stay flat.
