小小的建議:豆干可以少一些,會吸收掉魷魚大部份的香氣,豬皮去掉口感會更好,三層肉+梅花肉肉質會更軟嫩,魷魚用米酒泡軟後剝去表層膜,要挑選細一點的青蔥 味道比較能爆香出來,蔥白多放 蔥葉少許即可,魷魚再切細一點能爆更香,最後的悶煮可以再多一點時間 香氣會更足,我會不會太挑剔了😊。
整體來說非常不錯,富有客家人的味道。

其實真正客家小炒是蔥不是芹菜,以前也沒加豆乾,因為魷魚貴店家加入豆乾看起來份量比較大
確實是如此, 豆干是拿來湊數的..... 但是一班不敢吃肥肉的人, 光是挑蔥段和豆干就可以八上一大碗白飯啦:)

喜歡一些小撇步例如炒肉要用大火開始,炒魷魚要從小火開始,炒到魷魚有冒小泡泡,等等
