  • The layers of thinly sliced vegetables create a perfect harmony and flavorful sauce without any dairy. It takes a while to slice them up, but it is well worth your time! Perfect for dinner as is and for breakfast using the leftovers and serving it with toasted bread and fried eggs. I love how affordable this dish is, but it can look formal and tastes great! You can meal prep anytime and stick it in the oven when you are ready.
    The Vegeta seasoning is like Polish MSG -Available at European grocery stores. It’s made out of vegetables, tastes great, and is versatile - it can be used for any savory dishes like roasts and soups . The smoked pork sausage called Kielbasy is so rich and flavorful. Adding just a bit goes a long way.

    Ingredients:
    2 lbs of Russet Potatoes
    1 lb of Red Potatoes
    1 lb of carrots
    ½ lb of beets
    ½ - 1 lb of Kielbasy smoked sausage
    1 lb of onions
    1 large red bell peppers
    3 teaspoons of Vegeta seasoning
    ¼ teaspoon of ground black pepper
    Bake 425 F for an hour with tin foil
