Custard Cream Apple Pie | Honeykki 꿀키

  • Today’s menu is apple pie filled with custard cream.
    This menu popped up in my Instagram feed, so I was curious about it. So, I tried it.
    I’m sure it’s not 100% the same, but I tried to recreate it as closely as possible.
    I used store-bought puff pastry and it was so convenient.

    Ingredients (for 8 served)
    Puff Pastry for 16 pieces
    Apple filling: 2 apples, 30g butter, 100g sugar, 1Tbs lemon juice
    Custard pastry cream: 6 egg yolks, 100g sugar, 1 vanilla bean(or vanilla extract), 500ml milk, 50g cake flour
    egg wash, Decorgel (*optional)
    Custard pastry cream
    1. Pour the milk and vanilla bean(split and scraped) and simmer until edge starts to bubble.
    2. In a mixing bowl, add and whip egg yolks and sugar until pale yellow. And then, add and mix flour.
    3. Slowly pour the (1)milk into (2)egg mixture.
    4. Strain the (3)mixture and simmer in a pot on medium low heat.
    5. While simmering, keep stirring until soft cream consistency.
    6. Set aside to cool in a bowl, sealed with wrap.
    Apple filling
    1. Core and peel quarters of apples and coarsely chop.
    2. Put and simmer the apple, sugar and butter until cooked through.
    3. Finish off with lemon juice and set aside to cool in a bowl.
    Assembly
    1. Put the apple filling on the puff pastry and brush the edges with egg wash.
    2. Cover with puff pastry and use a round cooking cutter to make the half moon shape.
    3. Transfer on a baking pan and bake in preheated oven at 190℃ for 15min or until golden brown.
    4. Cool the pie and pipe the custard pastry cream into the pies.
    5. Brush the pies with decorgel(neutral glaze gel). Done!

    정말 매번 느끼는 거지만 꿀키님 영상은 어쩜 이렇게 포근하고 예쁘고 그럴까요! 어떻게 혼자 요리하면서 이런 영상미까지 뽑아내시는지 ㅠㅠㅜ 짱이에요! 그나저나... 이걸 왜 전 이 늦은 시간에 틀어서.... 또르르... 내일 무조건 비슷한걸 사먹던지 해보던지 해야겠어요 ㅠㅠ

    오늘의 메뉴는 커스타드크림이 듬뿍 들어간 애플파이입니다.
    이 메뉴가 SNS에서 자주 보이길래 궁금해서 만들어 봤습니다.
    매장에서 파는 것과 100%같지는 않겠지만, 최대한 비슷하게 만들어보려고 했어요.
    여름이라 페이스트리 만드는게 힘들어서 생지를 사용했는데 편하더라고요.
    올해 제가 만든 디저트 중에 제일 맛있었어요! :)

    تفاح مفروم +سكر حبيبات + عصرة ليمونة +ملقة زبدة مكونات الحشوة تطبخ على نار هادئة والتغليب البسيط لتحافظ على شكل مكعبات التفاح ولا تنهرس
    القسم الثاني صوص الحليب والفانيليا
    6 بيضات مع قليل من السكر وتخفق جيدا
    حليب وفانيليا تمزج وتغلى ثم تصفى
    تضاف الى البيض وقليل من الدقيق تحرك على النار حتى يثخن القوام تبرد وتوضع في كيس لاضافتها للحشوة
    اما الجزء الاهم هو قطع العجين المورقة مسبقا والذي استخدمت قالب مستدير لتقطيعهاا بالشكل الذي شاهدناه طبعا السائل الذي استخدمت الفرشاة في دهنه هو بيض مخفوق
    اما مكونات العجينة والتي لم يشار لها ولطريقة توريقها فهي طحين وخميرة وحليب بودرة وتعجن بشكل عادي وتخمر ساعة ثم تكور لعشرة كرات ثم تستريح نصف ساعة ثم يتم رقها ارغفة رقيقة حدا وتوضع فوق بعض وتتخللها رشات نشاء ذرة لمنع الالتصاق ثم ترق مجتمعة ويتم تقطيعها واستخدامها
    وهناك في الاسوق رقائق جاهزة مثل المستخدمة بالفيديو
    لاتنسونا من الدعاء

      Sheriff H For custard. It does take this much egg yolks to make it. You can always use the powder sold in markets instead. Comes out pretty much the same and all you got to do is add milk and sugar.

      궁금하실수도 있으니 답변합니다 우유, 바닐라빈 끓이는것 , 커스타드크림 저으면서 끓이는것 전부 센불로 알고있어요 !

      @@soul6805 우유와 바닐라빈 끓이는 것은 강불에 하셔도 되지만 커스터드크림만드실 때는 중불로 하셔야합니다

      왜 센불로 해도 된다는지 모르겠지만.. 요알못들은 우유같은 거 센불로 끓이면 난리납니다. 금방 끓어올라서 넘쳐요. 기본적으로 뭐든지 불 최대 세기가 5단계라고 치면 2나 3 정도로만 끓이세요.

      쎈불로 끓이는게 맞더라구요.
      약한불이면 오히려 수중기증발땜시 수분손실이올수있어요.
      대신 바닥이 타지않도록 자주 저어주셔야해용

    Just made the Apple Custard Cream Puff. They looked and tasted fabulous. Initially when I took them out after 15 minutes the pastry looked dry so I brushed egg wash on top and after anotger 5 minutes the pastry was crispy and golden. Thanks Honeykki :)

    Just want to thank you for the recipe! I tried them in Japan and they were so good so I really wanted to recreate them at home! I think the apple filling is spot on, but the custard cream in Ringo tasted a bit less vanilla-y than this recipe, and I think Ringo may have used heavy cream instead of milk to make the custard. Just a bit of sharing! 😊 Thanks for the recipe❤

    I'd consider this finely chopped 🍎🍏
    If you dip the cutter in some flour it won't stick.
