    Hey, I’m Chinese here. Just want to give a little advise on the ramen. To make dishes more flavorful, we usually saute the mashed garlic first, then add frozen veggies to give them more time to become soft. Then adding the cooked ramen and spices. Overall, very inspiring video!

    So many negative comments. When I was first married and husband was Pvt. in the army and baby due, this would've been a meal for a king for me then.
    Mom always told us, "if you can't say anything nice, keep it to yourself". 'Nuff said.

      Kathy I remember when I was first married. He was a PV2 and I got pregnant with our son 3 weeks after we got married. We were so broke and the day after I found out I was pregnant we had to PCS to Alaska which meant I had to leave my job behind, making us even more broke. We had no furniture, a baby on the way and no car because our car was being shipped. I remember how much we struggled those first few months. It was a true test of our character and perseverance that’s for sure. I’m so grateful my granny taught me how to cook from scratch, that saved us as I had a high risk pregnancy and was unable to work the whole pregnancy. Fortunately, I have a happy, healthy 14 year old son now. It has definitely humbled me to have made it through those hard times.
      We are financially secure now but I still live like we are broke because I’m used to it. Our house is paid off now in our 30’s, our cars are paid off, no credit card debt and a healthy savings because I continued to live below our means.

    As a Mexican whose food staple is the cheap pinto bean, this is how we usually make the most out of our pot of pinto beans. We make a medium to large size pot of beans so we can use them three times over. The first time its the pot of beans in saltwater with one jalapeno and onion popped in there for added flavor. You can serve it with some meat or rice w/ salsa, or eat it like soup !( just add lime-cilantro, chopped onion, and some salsa which is optional). We eat them this way for like a day or two before making them into refried beans. We do that by heating up lard or oil in a man and adding the beans ( w/ little to no liquid, you can transfer the jalapeno the onion not so much) , then on low heat let them slowly thicken while mashing them with a potato masher or a cup. Here you can add a chipotle in adobe chili (the ones in the can) for a little added smokey spicy flavor but again optional. You can use these refried beans to make fried tacos or in a burrito, taquitos etc. we eat them for a day like this, the day after that you'll probably only have a little bit of refried beans left, we fry it one last time and scramble an egg with it to eat with tortillas and hot sauce. And boom you made your pot of beans stretch you the week, cost you a little bit of money, and since we made it three different ways you won't get tired of eating the same old same old. Just keep in mind you will be tooting a lot more lol

      I do a similar thing with potatoes. I bake a whole bunch of them for one meal. The leftovers go into the fridge to be used as oven fries or home fries. Whatever is left gets mashed up as mashed potatoes or as a thickener for soup.

    Way to go.... I think we have all gotten spoiled and have forgotten how to budget. One can live on the basics like cabbage, oatmeal, flour, eggs, potatoes ect... comfortably . Thank you for reminding us!

    Tip for beans... Add the bullion cubes AFTER the beans finish and they will be more tender. Salt makes beans hard if added too soon. The bullion is very salty. In Mexico, beans are always salted at the end of cooking.

    Another good option is a frozen bag of leg quarters. It's around $6 at Walmart or Aldi and it comes with quite a few pieces in the bag.

    I’ve lived on an extreme budget in the past and something that’s often forgotten about is potatoes. So inexpensive yet so delicious and versatile. Also flour and bacon. You can do so much with these 2 ingredients. Walmart sells 10 lb bags of chicken leg quarters for around $5. This would really give you a lot of options and would carry over food to the next week thereby freeing up money for the following week. I think some chicken fried rice and chicken noodle soup with the ramen would have been on point.

      I always suggest potatoes also. My husband hates the 10# bag of hindquarters from Walmart so I do not get them unless I wanted it for myself.

      @@hgib3 The chicken is all in how you choose to make it. I always cook the chicken on the bone and shred for use in different recipes. I also use the bone broth left from cooking the chicken. I would never choose to eat that chicken on the bone as it's not as good a quality.

      Great idea. I just bought a 5 lb bag and baked them. I then used them the same way I do chicken: cut up into other recipes: burritos, in a bowl with diced chicken, sliced and sautéed with eggs, in an omelet, etc. it was so convenient having them cooked that I bought another bag and cooked all of them in my Instant pot. I keep a couple in the fridge and the rest in the freezer. My new addiction is pesto with lemon. Even though the pesto is $3 at Trader Joe’s, I get half a dozen recipes from it and dozens of portions. Really great with potatoes and chicken. Feels fancy, but still low cost.

      I buy that Ramen soup by the crate! I can’t use the seasoning packet cause it’s too much sodium in it, but I get low sodium chicken base (Better than Bouillon) and cook the ramen in the broth. Sometimes I add shredded chicken, corn, or stir in the great value brand egg substitute to make egg drop soup! Thanks for the info about the leg quarters, that would be great for lots of options too!!

    Hi, Mexican here, you are supposed to heat the tortillas make them a little browner in a frying pan, no oil, nothing. In Mexico we use a comal but you can use a non stick pan and it changes the flavor big time :)

    Skip the over salted ramens and use riced cauliflower. Use a bullion cube in a little water to season it. The riced cauliflower can also sub for the rice. It takes the taste of whatever you cook it in and lowers your carbs and raises your veggie intake.

      Do you know how much more money riced cauliflower is? Even a head of cauliflower is darn near $3. 2 ramens were $.50

      A bag of frozen caulifower is $1 and a head is $2.44. That head would make quite a few servings after you chop it up. Those 2 ramen have 70% of your daily sodium in them and she was adding salt like crazy. The cauliflower won't destroy your health the way all that salt will. It's worth the extra money.

    My husband was blown away when I bought a week's worth of groceries for $20. Yes, it is possible. Ramen noodles are not even close to a good idea for food. But they will suffice if you're broke.

    You can get a whole chicken or two at Walmart or ALDI. I cook it in an Instant Pot. Add a half chopped onion to the cavity and then whatever seasonings you like. Save the bones and the onion and then you can make chicken bone broth. Add 2 stalks of chopped celery and chopped carrots, or any other veggie scraps you have. Add a bay leaf or two, salt & pepper. Add filtered water to the max line, and set on soup setting, high pressure for 120 minutes. You can make two batches of bone broth with the bones and veggie scraps. If you have other bones saved add them. You can make soup with the bone broth or use it to cook your rice instead of water. I love drinking one cup of bone broth every morning. So many health benefits.

    Just a hint when making oatmeal with fresh apples. Dice the apples as you did but put the apples in the water before adding oatmeal. The apples cook and also add a little flavor to cooked oatmeal. I realize you were on a budget but this way of cooking oatmeal is great with cinnamon sugar as an added touch (when off budget) and use pantry ingredients you already have.

    Cook your tortillas it will taste sooo much better. You can just heat a pan and brown each side or if you have a gas stove just lay it on the fire and flip with tongs

    If you have left over beans and corn tortillas... make them crispy in the oven then mash some beans to put on top and then top that with a runny egg. It used to be one of my favorite budget meals

    Something to consider as well is that you can take one of those garlic cloves and plant it in a pot to grow more garlic bulbs. Same thing with the stem-ends of onions and eyes of potatoes. Minimal effort and takeaway from the food stores.

    ⚠: Warning about the pinto beans ( and some other beans, like black eyed peas ), Always search the beans FIRST before adding them into a cooking pot. It's rare, but sometimes you may find a small "Rock" mixed in with the beans. I'm not sure how they (rocks) get in there but you don't want to bite on them. The rocks almost look like the beans (especially pinto beans).
    I learned this from my late mother many years ago.

    When making rice, cut the stem off the top and bottom of the tomato and put it right into the rice cooker or pot with the rice as it cooks with a bullion cube and some garlic and you will have VERY flavorful rice with your meal.

      We do it often, it is probably the closest I've come to how they make Spanish rice in restaurants as a side dish with beans

    If you had an 8 oz of tomato sauce, you could make Mexican Rice, add in onion and garlic, YUM! It would go well with the pinto beans and corn tortillas (if you heat them up in a pan) Add some diced Chicken, and have Chicken tacos. I'd have added an inexpensive tomato and lettuce, and have build your own tacos. Cheap and easy Mexican dinner night. Thank you for doing this, I love getting ideas for inexpensive meals. = )

    I use canned pasta sauce for spaghetti sauce when I'm on a budget. I learned a trick with canned spaghetti sauce to 'freshen' it up add grated fresh onion, chopped fresh garlic or Italian seasoning then I top it with shredded mozzarella.

      You can also make your own with tomato paste and onion, garlic, olive oil and Italian seasoning. Cheaper in the long run. Italian seasoning is expensive to start but lasts for months.

    This was a very good video this is very realistic my mom lived off leg quarter and bagged rice and beans and popcorn when she was struggling on her own just starting out and we will always keep this knowledge in are back pockets if need be

    Just made the fried rice. It was excellent, I added cayenne, ponzu and liquid aminos. Aminos are like a light soy sauce. Highly recommend using more than the packet that comes with Ramen, or replacing it all together. Build your spice pantry, it's worth it. Thanks for the idea. We ate on this for2 days.

    One of the problems with budget cooking is always lack of variety. The other problem can be lack of nutrients. I suggest varying between white rice, brown rice pearled barley. Barley is excellent for fiber. It is recommended for diabetics. It is marvelous in soups.

      @@JuliaPacheco if you want to grow your own spinach and mustard greens you can plant seeds in the seed starter trays then once they've germinated you can transplant into an underbed organizer. And put it in the sun on the patio or porch. Just don't forget to water. In my case hail got it. 😢 #surprise!

      This is a great video but you should also looked at Frugal Fit Mom's channel, I don't think Julia will mind me saying that as she got inspiration from Christine at that channel. She has a lot of great cheap meal ideas that are easy to make, and she did a very well known Wallmart extreme budget challenge spending $30 for her whole family of 6, 126 meals, amazing!     Fry the corn tortillas (flat) til they're hard, then spread the beans. Tostados! I'd also recommend learning how to make Spanish rice. Just need to add a small can of tomato sauce to that haul. Also can make taquitos with the chicken and corn tortillas

    I sort pintos. I pour them into one bowl and pick up small handfuls at a time to put into another bowl after looking for small stones. I find them often. Just a heads up :)

      @@emily45798 only that I never soak them overnight like some websites say to do. They claim it reduces gas. It doesn't. Beans have a couple of sugars we don't digest well, and soaking doesn't fix that. But, if you eat beans frequently you will stop having gas. Go figure lol. I rinse them thoroughly in a strainer, after sorting. Then if it's summer, I cook them in a slow cooker, covered with about an inch or so of water, several hours. 10 hours or so even. In winter when I want the kitchen warm, I simmer on the stove a few hours to get them just done, stirring now and then and keeping them just covered with water. If you want the juice to get thick, keep the lid ajar slightly and cook 6 or so hours, keeping stirring every so often so they don't stick, and water topped off. I grew up poor. Mom would make pintos nice and thick and put them in a loaf pan in the fridge to chill. Then cut into slices and we'd have cold pinto sandwiches. lol

    You can add the veggies straight to the bake pan when making the chicken bake 😊 that’s what I do. Rice, onion, garlic, frozen veg, chicken on top pour liquid over. I combine the broth with a tin of condensed chicken soup. So good

    You did a great job. People don't understand what it is to truly have no resources. This is pretty similar to how I feed my kids when money is very tight. I will actually try your ramen idea next time that random poor childhood craving hits me 😂 which it does every once in a while. I would recommend you watch some videos on basics, such as how to use garlic (throwing it in your pan with the chicken drippings before the noodles, maybe with a dash of oil...and I know you went over budget a bit, but onion are also super cheap and can really be stretched and enhances flavor. ALSO if you have a dollar tree nearby, they have spring rolls, which would add to your chinese food night) .... but truly, you did great.

    Do you have lots of dandilions in the garden? Cleaned, washed and sprinkled with olive oil and lemon juice, they make a great salad you can add to. Make sure they have not been sprayed with weed-killer, know they are safe.

    I've started adding a can of tomato paste to the Hunts Spaghetti sauce bc it honestly is too watered down! ( FYI. I've written to the company asking them to reduce the water content bc we have it at our house so we can add it as needed.) I buy the 10# bags of legs and thighs then I cook it all at once in the oven and I debone it to put into casseroles. Add a quarter cup of lentils with rice and it's a complete protein and maybe flavor with the bullion.
    Our grocery store (HEB) has tilapia for $5 it's NOT counted as a meat item in the ratiins, so we get .85 pounds and I can made fish tacos. :)
    I put fried eggs on a hamburger bun with a slice of fried bologna.
    I use 1# of hamburger meat 80% and I drain it, put in taco seasoning and add a half a cup of rice. Add somewate. I put in some non-irradiated Cumen seeds, salt and pepper to taste. Then I tossed in a can of chili beans so if you've already got beans made you could add them in here instead. I cooked for 20 minutes and dinner was Yum! 😋

    Great video. FYI for anyone who wants pasta but you are out...there is an easy 2 ingredient pasta that can be made fairly quickly. No pasta machine necessary. I've used an all purpose flour in a pinch with the eggs and it has come out just fine.

    You might consider that you can buy whole chickens usually for much less than "boneless skinless", piece them up and then boil up the bones along with some carrot, celery and onion scraps and make a broth that is better for you and has more flavor and no MSG.

    I get a 12 pack of Ramen.
    12 packs for $2.84. Or a little over 23¢ a pack.
    The brand name costs $3 for 12.
    With tax on both, it's only saving 18¢.
    I'm on a tight budget so saving 18¢ here, a few dollars there adds up.
    I've saved up to $40 per grocery haul using my Winn-Dixie card, too.
    "A penny saved is a penny earned."
    My mom had saved the pennies and the other change for quite a while.
    She ended up with over $100 worth of pennies. And even more of the other change.
    Crazy that someone I know throws out his pennies because "they're worthless".
    He could've given them to me.

    Don't forget that you can make your own chicken broth using the chicken. It would be a healthier alternative to the bouillon cubes. Cabbage is also a budget friendly veggie.

    I think you did a great job on a budget, if you saute your garlic an onion in the pan a couple of minutes with a tlbs oil then add to you rice casserole or you can fry your chicken an the last 5 minutes of cooking time add onions an garlic to saute in the pan with it, then cut up your thighs add your 1/4c of veggies then add your Roman noodles an if you have soy sauce add 2Tlbs to everything then you can push to the side an add your egg . You will like it even more. Or fry your chicken add onion an garlic chop up add to your tortillas for a chicken taco with refried beans.

    I loved this video. I found it inspiring. Great job to challenge yourself like that. Don't let the negative comments get you down. As I always say negative people online is a good thing. The people that know them in real life get to truly witness how they really are. We can block online negativity but those IRL get the bigger gift they can get the toxic vampires out of their real lives.

    I mix a few slices of America cheese with my ramens. Use less water and seasoning, it’s like Mac n cheese...sometimes I add broccoli too.

    Almost the exact same way me and my husband shop the only thing is switch the rice and the bean size bags around and add a jug of salsa to it

    Thanks for sharing how people can stay on a small food budget if needed. A tip for cooking chicken breast that is moist is to bake it after you drizzle it with olive oil, season how you like and cover and bake. Do not over cook it or that will dry it out also. Olive oil seems key to moist chicken breast and it is only $1.99# at my Walmart, in the fresh meat section.

    A can of chickpeas at 60¢ could make a great snack, toss them in olive oil and seasonings and roast them in the oven until they're crunchy.

    Good job. Careful chopping the onion. I suggest sautéing onion and garlic. You could add chicken to pasta. I'm so impressed with you and your goal of saving for a home. Best wishes!

    Maybe it's a little more work but it might be worth it to buy bone in chicken with skin. The skin and bones make great stock.I think the best thing I learned in the past three years or so is how to break down whole turkeys and chickens. I feel like I get more bang for my buck in the end. Just takes a little time,desire to learn and a sharp knife and scissors.😉

    Looks yum! You could also fry the tortilla and blended the beans and if you had or bought lettuce. You cut shred it and make tostadas! They are 😋
