A few months ago I hit a very tight spot in my budget. I had 30€ for a whole month to spend on everything. Gas, food and other needs. I had other tight times before, but this month was really tight, because of other bills pouring in. So I hardcore shopped my pantry and freezer. I get fresh fruits at work so I only bought the cheapest veggies I could find and got through that month without going hungry. That month made me appreciate all I have so much more and now have my eyes open for people who are struggling. I had only this one month, others have this every month 😞
Wow. Thanks so much for sharing! I’m sorry you went through such a tight spot. I think we can all benefit from living on an extreme budget for a season.
Very similar in western New York... $24.28 (with larger packages of the dried items). Luckily, most of these items are great to have on hand at all times. I would only need to buy bananas and a pumpkin, so I could make these meals for free (sort of)!
Great idea! Here (Munich, Germany) I'm at 21,76€. This was fascinating! Actually I have spelt spaghetti, because they where WAY cheaper. Also they didn't have dried chickpeas online and a can is 1,29 - where I know I can get them for 49 cents at Aldi, or just use dried. The organic lentils were the cheapest, also the organic lime had the same price as the non organic lemon!
I feel like I FINALLY found a channel that really helps people transition more practically to a vegan lifestyle. The recipes looks amazing and aren't using ingredients that seem too daunting to try. Thank you for such great content!
Congratulations! Well done. I am so delighted to see a young woman and mother being so practical. I am a granny vegan and am always distressed when I hear people complaining about how expensive it is to “eat healthy “ . I am close to 80 and have raised my family on a tight budget always able to feed them healthy tasty vegan food. With this video you show folks how to do this. Wonderful indeed! btw you have a darling ❤little boy.
This was inspiring, since we use over 250€ on groceries in a week as a family with two toddlers. (Food prices are very high here in Scandinavia.) I tend to go to the store whenever I feel one or two items are missing but I should just get more creative with the remaining ingredients!
Prices will definitely be higher there, but I bet you can save some money with some of the tips and recipes I shared! But I understand too.. I like to have lots of options with toddlers ☺️
I like that you added the calories in, I have watched other budget videos and with some there is no way that it would be enough calories for most people.
I honestly think I might try to create this entire video of meals. I have never done that before, but I have all of the groceries, a few hours tomorrow, and excitement about these foods! I also appreciate the ingredients to each recipe being on the screen for screenshots. New subscriber!
£12.70 here in the UK for your shopping list as a comparison! And for all the dried goods they’re 500g instead of 300g! Great video with great inspo, especially for us in the UK in a cost of living and energy price crisis :)
Thanks so much for the video, Faith. I’d love to see more like it! Also, your single-serve baked oats recipes on your website are my fave. I use the banana bread one as my base. It’s sooo good! 😋
i followed this last week- it was so delicious and I was so full-i love the budget videos and all of your videos- we will be in Bali for a month soon and will be making a lot of your recipes- sending you love and light
I'm in Pittsburgh, and I put in everything except the chickpeas and lentils (allergic to legumes), and the spices ( already have) and it came out to 20.51. Great video!

You may find 'onion skin tea' a useful search... It does not have a strong flavour, its very nutritious and basically free. If you cut off the top of beetroot, carrots etc you can regrow the greens and use as salad greens. Lots of videos on yt with instructions :) Search 'carrot greens'.
I made a double batch of your pumpkin lentil curry soup. OMG so tasty! Thanks so much for sharing the pdf. Pumpkins are always in season and available in Queensland where I am so I'll definitely be making again 🥰🇦🇺
It all looks wonderful. I make your pumpkin soup with butternut squash instead of pumpkin. I add chic peas and chunks of roasted sweet potato. So good. Thanks for the recipes!!
Hi, not sure if you're aware, but chick pea water (after cooking them in it) can be used as an egg substitute, or as a vegan whipped topping if you add sugar and vanilla. 🥰
Yes! I love using aquafaba, but the aquafaba I get after cooking chickpeas doesn’t seem to be the same. Maybe I need to simmer it for a bit to let it thicken??
I really love these videos of yours because they make me so much more appreciative of the food I eat and reminds me that sometimes creativity is they key to a simple, yet delicious meal! Also: Red lentil and pumpkin soup is such a classic for me every fall - and there are so many options to make it! . Sending you lots and lots of love! Have a great rest of the week!

You are so creative and inspiring; I truly enjoy watching your food prep and meal making. Thank you for sharing all of this with us!! xoxo Debbie
Love the recipes! So healthy and easy to cook. Loved how you used red lentils in your marinara sauce to boost its nutrition and volume. And that red lentil and pumpkin soup is a winner. I also make a similar soup with lentils, butternut squash and kale. So delicious:) Thanks for sharing and have a great day.
Wow your video was refreshing. Thank you for being clear, inspiring and not overly annoyed by your followers. Haha! I love budget challenges and getting inspired from people like you. New subscriber here! 🎉
Wow! You put a lot work into this! Especially since you had to cook separately for the kids. I’m looking forward to making big batches of soup for the weeks ahead.
Love you Faith. This is so important for us all to know in these financially challenging days. I’m going to try all the recipes. And once again thanks for your awesome cook book. God Bless
Wow that looks so good!!! So nutritious. If you keep bananas in a bunch and keep the top stem covered it slows down ripening. I thought nah!! But I tried it, and it worked!!
@@TheConscientiousEater yup im having pumpkin tomorrow and salad and eggs 😊 its the best way to eat well and not gain extra pounds way more energy 😊🌞🌞🌞🌞
Great food as always, simple, enjoyable, affordable. I actually make exactly the same pumpkin soup and lentil stew/curry/marinara thing on weekly basis too. I have to make this bread though, looks gooooood.

Just found your channel, great meal inspiration!! I'm in Canada and this would be around 35$ where I live, which is about what I've seen from US budget or meal videos- we are about double in cost. Thanks for sharing!
I love this vid!!✨ It reminds me of my own cooking, I eat plant bassd on food stamps atm so I get creative a lot, too, lol. Also like that you water-saute, I like to stay oil free most of the time! Subbed!
Thank you so much for this video. I am making the pumpkin soup on repeat, I ate it 3 times already :D It is cheap, quick and makes a ton of soup, usually lasts me for 6 meals! My husband loves it too - success all around
Loved the ideas! Also, it was halfway through the video before I thought: wait, where's the meat? And proceeded to facepalm, remembering the price of meat LOL (sigh) I admit I love being lazy and stay at home and be creative with what's already in the house. And it's also so easy to pop out to the shops just to get 2 items. But with the price of gas nowadays... ehhh better stay home lol and those lentils! SAVIOUR The breakfasts with variations on oatmeal+bananas is brilliant. I took that idea (it was floating around for a while) and made it into some type of dense bread baked in the oven that I cut into breakfast bars (or meal saver on the road). Anyway, great video, loved the meal ideas!
@@TheConscientiousEater AH! I just remembered! I made some really good cauliflower curries last week! One was tomato-based and mediterranean flavours, with chickpeas as protein, and the other had an Asian profile, simmered in coconut milk, five spices, ginger, garlic, and edamame for protein! All served on rice. Yum! You say little odd? I say flavourful ideas! Your coconut-lemon pasta is intriguing ;)
Fun vid! Thx! I love cooking this way, but like you, I enjoy eating more veggies than this. I used to shop once a month on a whisper of money as a young mom. Yes, monthly shopping with occasional produce runs in between is better because you can work things to afford #25 bags of staples to use over several months. Bulk buying is much less expensive and allows for more variety (and also more fresh produce) without using more money. Frugality was necessary for my large family at first but now is my hobby.
Hi there. A lovely week but please remember to add in the cost of a B12 supplement. There is also no vitamin D too. These nutrients will cause serious issues if not addressed long term.
Those are definitely important! This was just a random experiment for one week, but including vitamins in your budget is important! Thanks for the reminder!
I don't use oil at all so I saute my pumpkin seeds in a bit of tamari, when they are sauted I lightly salt them, and add a bit of lemon pepper, You did a great week your $13.89 priced out at $24.69, I just priced everything out at my least expensive store online.
So I’m not actually plant based but I found your channel the other day and you’ve inspired me to incorporate more veggies in my diet. I have nearly all of these ingredients so I want to give these recipes a try. I’m counting macros and I’m trying to get 130g of protein a day. I’ve noticed that vegan food is carb heavy although there is still some protein. Would nutritional yeast or tofu work in the taste of any of these meals to help boost the protein content? Thank you so much for your content! I bought your book and I’m looking forward to learning more to expand my diet.
Hi! I’m so glad you’re here and are enjoying my content! Nutritional yeast would be great in or on the marinara sauce and I would have loved baked tofu with the soup or a tofu scramble with nutritional yeast to pair with 1-2 pancakes. I hope you like the recipes and can make them higher in protein!
YES! Thanks for sharing, these kind of videos are always mega helpful. It happens to me too that whenever Im running low on groceries, my creativity goes to the roof. Its an interesting and wonderful way to end up trying new stuff and saving a bit of money too. Xoxox from Chile!
Love this plant based week! Going to try these recipes. Great point with our impulses to grocery shop when most of us probably have something in the pantry 🤪 I'm very guilty with that!
I love this video and your creative approach! You could have used aquafaba the water from boiling chickpeas in your meal prep like pancakes. Who said that being vegan has to be expensive?
I don’t know why I didn’t think to use the aquafaba! I’ve never used homemade aquafaba. I think I would have to boil it down?? I’ll definitely try that next time!
Wow... thank you so much for sharing your creativity.... and wonderful personality at the same time🥰 Love love love it🤩 I have a weekly budget for me and my hubby.. but maybe I should try to lower it. I have now realized, that we will survive😅
I definitely don’t eat this cheaply every week, but I love the challenge and how budgeting gets me to eat simpler meals and get creative in the kitchen!
I stumbled upon this video of yours and I'm so glad! I'm always looking for budget meal ideas but most of the videos out there don't have enough veggies for the way I like to eat. I'm not even vegan or vegetarian but I cook a lot of very similar things to what you had here in this video on a regular basis! cool video and you gave me a few good ideas, I'll def try that pumpkin soup and your bread recipe, and those lentil patties! looked so good

A tip for inexpensive whole wheat flour - get Atta flour. It is finely ground whole wheat, it works well in baking cakes, muffins, flatbreads, it’s like a whole wheat pastry flour. But you can combine it with a bit of high protein wheat flour to make good rolls and other yeast bread.

Thankyou Faith, I always love your recipes. You inspire me all the time 😀 have a fab day from Australia
Thanks for watching and saying hi! I’m so glad you enjoy my videos!
It’s my pleasure, I want to eat more plants and your videos are a great resource, I watch your and Derek from simnett nutrition all the time 😀
Brilliant video, such healthy and colourful food!
Thanks so much!!
What vegan sos free protein powder do you recommend or use?
I’m not sure if the protein powders I’ve used are sos free. I’m guessing you mean salt oil and sugar free?
Yes.
I love your pancake grill!
Me too! I use it so often and it’s so easy to clean off!
This is a great challenge and video. Thank you!
You’re so welcome!
Thanks Faith.
Thanks for the ideas.
Your welcome!
I was just watching your last budget video! Gonna try that bread!!!
Yes, do it!!
Nice video 👌 thank you
And thank YOU for watching!
Wow! I wish I lived in your town! Where I live this all would cost at least double.
We are so spoiled. It's sometimes even easier to eat out than cook at home depending on where you go!
I hope you like the recipes and can make them higher in protein!
what would you add to the baked oatmeal to make it better? it looks good and I want to try it!
Maybe a touch of oil, a little sugar and some aquafaba or a flax egg!
YES! Thanks for sharing, these kind of videos are always mega helpful. It happens to me too that whenever Im running low on groceries, my creativity goes to the roof. Its an interesting and wonderful way to end up trying new stuff and saving a bit of money too. Xoxox from Chile!
And thanks for watching! I love connecting with people all over the world!
Love this plant based week! Going to try these recipes.
Great point with our impulses to grocery shop when most of us probably have something in the pantry 🤪 I'm very guilty with that!
I hope you like some of the recipes!
I’ll definitely try that next time!
im wondering where are you located since the stuffs looked like you shopped in Malaysia :)
Yep! I’m in malaysia!
6:50 you got the skills! 😅😌
It’s a mom trick ☺️
Wow... thank you so much for sharing your creativity.... and wonderful personality at the same time🥰 Love love love it🤩 I have a weekly budget for me and my hubby.. but maybe I should try to lower it. I have now realized, that we will survive😅
I definitely don’t eat this cheaply every week, but I love the challenge and how budgeting gets me to eat simpler meals and get creative in the kitchen!
Another fantastic video, Faith! You did incredibly well!
Thank you so much for watching and saying hi!
I stumbled upon this video of yours and I'm so glad! I'm always looking for budget meal ideas but most of the videos out there don't have enough veggies for the way I like to eat. I'm not even vegan or vegetarian but I cook a lot of very similar things to what you had here in this video on a regular basis! cool video and you gave me a few good ideas, I'll def try that pumpkin soup and your bread recipe, and those lentil patties! looked so good
So glad you enjoyed this video and found it helpful!!
What a wonderful video with so much inspiration for plants based meals while budgeting. Thank you for the wonderful content. I have been enjoying your videos for the past few weeks and have been trying out some of your recipies with my family. Your curries have been a big win for the entire household 😃
That’s so great to hear! Thanks for watching and for your support!
What oven temperature for the bread?
475F
Thanks for this challenge and all the recipes! Here in Italy I would pay roundabout 16€ for your shopping list.
Oh that’s not bad! Thanks for sharing!
What a great plan‼️ thanks 😊
You’re so welcome Ruth!
