honestly, if I where to do a mix, I would layer both the acoustic and the acoustic sim over each other. The acoustic was warmer but lacked high end and the sim was clearer but lacked a bit of low end. I think they would complement each other well.
The actual acoustic is very different. I think I like it better tbh.
Listening on my phone and not watching and I didn't notice the change... Passive listening this is.
Hearing baritone acoustic makes me think you should try convert an acoustic bass into a baritone guitar like what you did with the ibanez. Could be a cool but familiar project.

Actual acoustic so much fuller and nicer. The acoustic sim sounds like a really cheap single coil through a treble heavy amp imo

I think a better result would come out of the sim if the neck pickup was used instead of the bridge since the neck position is where the soundhole of the acoustic is.
The acoustic mix had way too much low end. Also was it DI instead of mic'd? I feel like it could have sounded so much better.

It's based on an old song I wrote that does have lyrics, but being one of my first they're pretty amateur
