I can't imagine not peeling my carrots. I peel mine always. For those that dont peel, I noticed its mostly cheap commercial food vendors or some just feel the carrot is clean enough. They just wash and dice

Yes you do, so they’re clean and ready to use when you get them from the freezer

It’s going to depend on how much veggies you like in your Rice, I would add four cups of mixed veg to my four cups of Rice for Fried Rice
