I'm 1/4 Chinese lol I can remember going to family gatherings with like 50 cuzzies and all the aunties would be slaving away in the kitchen making this kind of stuff. Lol always tasted amazing especially if it was made by the 1st generation kiwis who were taught the traditional Cantonese way back in China.
I've been taught how to cook Cantonese food the traditional way, and I just want to add that instead of adding the cornstarch and water separately to marinade the chicken, one should mix the cornstarch and water separately (cornstarch solution) before adding it into the chicken. And you should also add a bit of oil at the end to seal the juices into the meat before you place them in the fridge for 20mins. But I guess this is still a simple recipe for people who want to learn Chinese cooking.

made this dish tonight after seeing this vid this morning. for texture it was 10/10, all the "gravy" made it really moist and lovely. however on taste there was something a bit lacking. we couldn't really taste the garlic or ginger, and it was missing a bit of a kick. still perfectly fine on it own, but we added some soy sauce/sweet chilli to go with it which made it perfect.

I'm an experienced Asian food cook and just by watching the video I knew it will be quite bland. Not very inspiring recipe if you need chilly sauce to make it eadible.
Nice recipe. I use Medium Egg noodles (not dry ones) and also add quite a few spices, only a little of each XD Cumin, Ginger, Garlic powder, Chilli flakes, seseme seeds, a little sesame oil. Some 7 thai spice (which does include some of those anyway) pepper, and a little dark and light soy sauce. Tea spoon of sugar. Half a small lemon. One onion, 2 spring onions. Water helps so much :) so much flavour :) Too much of the spices is bad but a small but nice amount is good for my taste :)

I did stir fried noodles yesterday, it's almost the same thing.. but instead of putting chopped garlic, i did a sauce with crush garlic, little vinegar, salt, sugar, ajinomoto and little water.. here in Mauritius, the chineses don't put ginger in their stir fried noodles.. stir fried noodles are served with a chili sauce and the garlic sauce also..

I have a question, no matter how much water I put in there, I can't get that much gravy, my meat always ends up quite dry. Am I leaving it covered for to long, or maybe it's not properly covered?
When you are doing stir-fry dishes, adding finely diced garlic will not be burned in cooking process, since others ingredients will hydrate the garlic really well, and also, the marinate and oil will keep the garlic a little crunchy and flavourful, and stay away from the dehydrate process. You can find the process quite often in Chinese cooking especially in frying dishes. It is believed that by stir frying the diced garlic, ginger and sometimes green onions in advance, their taste will fully get in the oil. However, it can be over burnt sometimes (which is wrong). The ideal is to fry till the color becomes golden;) and the smell is lovely.

Keanen Ferns if you are cooking this dish in particular, i would just leave it out. with my noodle dishes when i cook them i just use dark muscovado sugar and water, no flour as i think it takes away slightly from the freshness of taste and texture.
Haha it does look a bit like burnt garlic! It's actually the bits of yummy marinade that have caramelised - which is why we keep it! We usually fight for these bits when eating the noodles :)
Hey Keanen Ferns. The cornflour adds a silky coating to the chicken so it has an even more pleasant mouthfeel. Omitting this from the marinade won't hurt the final dish terribly much :)

I have some suggestions. Do everything that you did, then when adding the salt sugar and dark soy to the noodles, also add in a little garlic sauce (it is a very light liquid sauce, prepared easily with some garlic, hint of ginger, some salt and sugar all in some warm water). For those who want a little more flavour, add in a tbsp of fish sauce. But wait there's more, top the cooked noodles with some thinly cut garlic sprouts, and some chives (to taste). Then cover the wok to let the sprouts' flavours incorporate to the noodles. BTW, digging the accent
