Ikr, I got chased by cops countless times on a 80cc bike. You either hit the woods or dirt roads. Except in my village, they can bring a helicopter there and they won't find me, (greece)

Turn turn turn.... side streets, off roads, steep hills, SAND!! Never long straight roads... change directions often. Park it behind a garbage bin; along side a uhaul - ups - usps truck. Or at a car lot and go look at cars. Keep it quiet.

I used to get chased all the time on my kx 100 and loved every minute of it
That damn Euro cop car which may be Renault , BMW or Mercedes was probably clocking 20km to 130km in just 6 sec. otherwise its tough to keep up with any agile and adequately powered dirt bike !
I also suspect the bike to be kinda under powered while doing 100km may be around in 8 sec. , hence the close call !
The biker during the whole chase was looking for a breakthrough and that cop and his driving was so relentless in giving very little to none of the space to the biker to chose any well timed shortcut until the end !
