The capsicum masala rice is made of a mixture of roasted spices and peanuts for spiciness and nuttiness with various colors of bell peppers added to make it very colorful.

Ingredients
1 tsp Black Mustard Seeds
1 tsp Black Gram Dal(minapappu)
2 big Capsicums(bell peppers)-Thinly Sliced
1 inch piece Cinnamon Stick
3 cup Cooked Rice
1 tbsp Coriander Seeds
1/2 tsp Cumin seeds
3-4 piece Dry red chillies(adjust spice level)
10-12 numbe r Fresh Curry Leaves
1 tbsp Freshly Grated Coconut(Optional)
2 1/2 tbsp Ghee/Oil
3 tbsp Roasted Peanuts
Direction
• To the cooked rice add a tsp of Ghee and combine(each grain should be separate). Keep aside.Heat a tsp ghee in a cooking vessel on medium heat and add cumin seeds and black gram and fry till the cumin splutters and the dal turns light brown. Add the coriander seeds, cinnamon stick, curry leaves and dry red chillis and fry further for another minute till the rawness disappears and the flavors come out. Finally add the roasted peanuts and combine with the other spices for a few seconds and turn off heat. Once cool, grind to a make a fine powder. In the same vessel, add the remaining oil/ghee and once its hot, add mustard seeds and let them splutter. Add the curry leaves and let the flavor of the curry leaves come out and the leaves turn crisp. Add the sliced capsicums and fry them for approx 3 minutes. Don't over cook them, let the capsicums retain their crunchy texture. Add salt to taste and combine well. Reduce heat and add the cooked rice and combine with the spice mixture. Add the grated coconut,roasted peanuts and ground masala powder and combine with the rice till its well mixed Serve hot with pickle,yogurt,appadam(poppadams).

Hi Vah Chef. Thank you for the recipe. I made a slight variation. I cooked rice with fresh ground coconut paste a few pepper pods, cardamom, cinnamon and cloves with a little salt. Before I saute the capsicum I fried a cup of chopped onion and ginger garlic paste. To the dry roast I added sesame seeds instead of groundnut. It turned out awesome. Thank you once again for all the other awesome recipes.
The aroma of the ground spices is amazing.... I enjoyed cooking and my husband loved this
I am american and I LOVE foreign food, especially Indian food, it's the best food in the WORLD!!! American food is not really "american" it's a blead of many different cultures and over time it's gotten to be rather bland for my liking. I love indian food though, because it has many different spices which make it WONDERFUL. RahChef, keep cooking great food!

For 1 cup of rice, you must add just 1 1/4 cup of water, then u'r rice will be like individually cooked grains..u can also add a little oil while cooking to help it remain separate.

I watched your video yday, and tried it .. something very tasty and different. While frying the capsicum you can add litte ginger garlic paste ... It gives a nice taste and smell while cooking ..!

You heard him right. In south Indian Cuisine there is spice blend called Gunpowder or Molagapodi, which is made using different kinds of lentils.
It's kind of dry chutney powder which adds hot and spicy taste to bland food like plain rice or different kinds of pancakes .

Good recipe, made just now for kids, it turned out good. To add more substance I added frozen peas they tasted fine too. Capsicum pieces were nice juicy and crunchy. Keep up the great work.

Great receipe, turned up very well, i was trying to find good recepies with bell pepper.. this one was amazing..I used oil instead of butter, im not sure butter may enhance more flavour, but enjoyed it..Thanks for sharing..

In my opinion, there is nobody on the Food Network as good as this guy. He has it all...Great recipes, looks, personality, great screen presence. I have actually made a few of his recipes and they come out great! My favorites are his hot and sour soup recipe and vegetable biryani.

There is a spicy masala that is actually called "gunpowder" in south India. That's what he is referring to.
