    Serving : 4 - 5 people
    Recipe ingredients :
    1) Dosa Batter ingredients :
    Dosa rice - 2 cups
    Urad dal - 1/2 cup
    Methi seeds - 1/4 Tsp
    Water - To soak
    2) Refried Beans :
    Boiled Rajma - 1 & 1/2 cup (approx 300 grams)
    Water - 1/4 cup
    Olive oil - 2 Tbsp
    Oregano - 1/2 Tsp
    Chilli flakes - 1/2 Tsp
    Black pepper powder - 1/4 Tsp
    Salt - 1/2 Tsp (as per taste)
    Smoked paprika - 1Tsp
    3) Corn salsa ingredients :
    Boiled sweet corn - 2 cups (300 grams)
    Capsicum - 1/2 Cup
    Coriander - 2 Tbsp
    Salt - 1/2 Tsp (as per taste)
    Lime juice - 1 & 1/2 Tbsp
    4) Mexican seasoning ingredients:
    Red chilli powder - 1 Tbsp
    Roasted cumin powder - 1/2 Tsp
    Black pepper powder - 1/4 Tsp
    Oregano - 1 Tsp
    Smoked paprika - 1 Tsp
    Rock salt - 1/4 Tsp
    Red Leicester Cheese - As per taste
    Processed / Cheddar cheese - As per taste

    Hello, Is there any trick for fermenting batter in very cold weather?

      Hi.
      To ferment dosa batter in
      winter using an oven, follow these steps:
      1) Prepare the dosa batter as usual. 2)Place the batter in a large, oven-safe bowl, leaving enough space for it to expand during fermentation.
      3) Preheat your oven to 100°C - 140°c for a few minutes, then turn it off. This provides a warm environment for fermentation.
      4) Cover the bowl with a lid or plastic wrap to trap heat and moisture. Place the bowl in the turned-off oven.
      5)f your oven has a light, you can turn it on to generate a bit of warmth. This can help maintain an ideal fermentation temperature.
      6) Check the batter periodically to ensure it’s fermenting properly. This process may take longer in colder temperatures, so be patient.
      7) Once the batter has fermented and doubled in volume, remove it from the oven. It should have a slightly tangy aroma. Remember to monitor the batter regularly to avoid over-fermentation. Adjusting the fermentation time might be necessary based on your specific kitchen conditions.

      You can use lukewarm water while grinding and then keep the batter in the microwave oven to keep warm and there by ferment well.
