    Homemade, moist, buttery, light and fluffy vanilla cupcakes from scratch. Perfect every time and so versatile, you can pair them with just about any filling and frosting combination! It took me a long time to formulate a recipe that yielded my version of THE BEST VANILLA CUPCAKE that was as fool proof as the box mix. Everyone has their own criteria for what a perfect vanilla cupcake should be and for me these are perfection! They're easy to make, in just one bowl and come out perfect every time.

    THE BEST Vanilla Cupcakes
    Yield: 12 cupcakes
    Ingredients
    1 1/4 cup (140g) cake flour, weighed or spooned and leveled
    3/4 cup (144g) granulated white sugar
    3/4 teaspoon baking powder
    1/4 teaspoon baking soda
    1/4 teaspoon salt
    1/4 cup (1/2 stick/57g) unsalted butter, softened
    3 tablespoons vegetable oil
    1 large egg, room temperature
    1 large egg yolk, room temperature
    1 tablespoon pure vanilla extract or vanilla bean paste: amzn.to/1WPUCi0
    1/2 cup (120g) sour cream, room temperature
    Directions
    Preheat oven to 350° F. Line a cupcake pan with baking cups.
    With an electric mixer, beat together cake flour, sugar, baking powder, baking soda, and salt on low speed for about 20 seconds. Add softened butter and oil and mix for about 1-2 minutes to coat the flour, until mixture resembles wet sand.
    In a small bowl, whisk together egg, yolk, vanilla, and sour cream until smooth. Slowly add the wet mixture on low speed. Scrape down bottom and sides of bowl. Increase to medium speed and beat for about 1 minute until batter is smooth.
    Distribute the batter between the baking cups, filling about 2/3 full. Bake for 16-20 minutes, or until an inserted toothpick comes out clean. (About 10 minutes for mini cupcakes). Transfer to a wire rack to cool completely before frosting.
    Classic Vanilla Buttercream Frosting
    Ingredients
    1/2 cup (1 stick/4oz) unsalted butter, softened
    1 1/2 teaspoons vanilla extract
    1/8 teaspoon salt
    2 cups (1/2lb) powdered sugar (confectioners' sugar), sifted
    2-3 tablespoons heavy whipping cream (sub half and half or milk if necessary)
    food coloring if desired
    Directions
    With an electric mixer, beat the softened butter on medium-high speed until light and creamy, about 2-3 minutes. Beat in vanilla and salt. Add the powdered sugar, 1 cup at a time, starting on on low and increasing to medium, until fully incorporated, scraping down sides and bottom of bowl as needed. Add cream, 1 tablespoon at a time, until desired consistency is reached. Scrape down bottom and sides of bowl. Add food coloring if desired. Increase to medium-high speed and beat for an additional 3-5 minutes until smooth, light and fluffy.
    Frost completely cooled cupcakes.

    I made this recipe yesterday and did exactly what it said and weighed everything and they turned out AWESOME. The best vanilla cupcakes I have tried, and believe me I have tried a few. These are so moist and yummy!

    i can highly recommend this recipe a definite for moist cupcakes, I am in the Uk so our cake flour is already self-rising, and I had to reduce the salt by half because I found I could taste the salt but just halved it and I use the un-salted butter and for the the UK cooks the 350F computes to 160c (fan) and they cooked in 24 mins for me with large cupcake cases. I am only saying cos it took two go's for me to cook them till done this recipe is geared for the US cooks me think, they are gorgeous when you finished butter creaming them !

      Its different the difference between there is the protein amount I'm in the UK and you can get cake flour from Amazon.

      Lindsay Ann you’re welcome! I love your recipes! I have a question though. Most recipes always say to cream the butter and sugar first but you didn’t so I wanted to know if it’s even necessary to do that lol. I think I prefer your method.

      Try my recipe! It took me a long time to perfect it, so it should come out perfect fro you, as long as you weigh the flour, to make sure you are not adding too much by mistake- this could cause a bigger dome than you want. Hope you love it!! :D

      I have specific recipes for cakes on my website, but if this will work too, just adjust the baking time. It will make one 8-inch cake layer

    lindsay ann! I have a toaster oven so do I have to pre heat it? also does the baking time varies in it?

      akari chiba Make sure your oven is calibrated to the correct temperature and your flour is measured correctly with a scale and they should never crack. Hope this helps. Be sure to let me know how it goes! :D

      Cake flour is what makes these cupcakes extra light and fluffy and tender, with a perfect rise in the oven. If you can't get cake flour, be sure to check out my video on how to make a cake flour substitute from all-purpose. Hope this helps!!

    I tried it three times and cup cakes keep collapsing
    I followed the exact directions.
    They come out hard and collapse and stick to the liners

      Ramon Grajeda Hmmm, haven't had any fails on this recipe before. Make sure you are using "cake flour", not all-purpose, and that it is measured correctly and that your oven is calibrated to the right temperature. Hope this helps!

      I did use cake flower from the box
      I mixed the batter for the exact time. Per the instructions...
      Then I put my cupcakes in the oven at 350 degrees.
      They rise nicely then all collapse.

      Can i suggest extra baking minutes, say 3 0r 2? and just in case, don't open the oven to check the cupcakes anytime before they're done. As you may know this drops the oven temperature and avoid the cupcakes to get firm and probably that's why they collapse. Hope this helps.
