Charlotte is an underrated big city. I have visited several times to watch sporting events. I am always intimidated when visiting large cities but Charlotte Uptown was so easy to walk around and enjoy myself. So clean and the people very nice.
Since you mentioned racetracks, I'd like to mention Phoenix Raceway in Avondale, Arizona, USA. The view of the desert hills around there is amazing, and people have regularly been known to climb the hills around it to watch the races at the track with an absolutely incredible view.
You Can add the „Neues Parkstadion „ to your List of special stadiums. It is the Home of the Schalke 04 Reserves and has parts of the old legendary „Parkstadion „ included. It is locatet directly nearby the „Veltins Arena „ and the famous Schalke 04 academy „Knappenschmiede „.
At Dennis Mahan Michie Stadium U.S.M.A. West Point you also get views of the Hudson River valley and Fort Putnam.The whole post(campus for civilians) is beyond beautiful. Go Army Beat Navy!

In your third installment, you could add Coors Field in Denver. You can see the Rocky Mountains from nearly every seat in the upper deck, and the "rock pile" bleachers offer a view of some of the downtown Denver skyscrapers poking out above the roof.
I am from Scotland and can say Fort William's Claggan Park is a truly stunning...stadium! I'd recommended Dumbarton FC's stadium if you were to do a part 3. It's located right next to the Dumbarton Rock and you can go to the top of the rock and watch the game.

An underrated suggestion for your next video is my Alma Mater Ithaca College's Butterfield Stadium in D3 NCAA. Not much to it, but an absolutely spectacular view of Cayuga lake as it's built on the side of a mountain (hill)

As an Athletic Club fan I'm in love with San Mames and its location in Bilbao (Basque Country), at the end of a street full of bars where all the supporters gather before and after matches.

Montreal's Circuit Gilles Villeneuve should be on the list, located in the middle of the St Lawrence Seaway the grandstands on the start/finish straight offer stunning views of the St Lawrence River and downtown montreal. I'd also include Daytona International Speedway Leguna Seca and Sears Point International Raceway on the list.

Regarding Rice-Eccles Stadium vs. LaVell Edwards Stadium - I would have to agree LaVell Edwards Stadium has a nicer view. The plus side for Rice-Eccles though, it has hosted the opening & closing ceremonies of the Olympic Games, and is poised to do so again.
Victoria Stadium, Gibraltar due for an upgrade soon to meet UEFA standards.. They've also got a brand new rugby stadium (well just) at Europa Point, from it you actually can see Africa and the Gibraltar Straits, though the view of the rock isn't as good.
