The foam is from starch.... I make split pea soup often. I love it on my pantry shelf. Nice job. I typically add carrots, onions, a little potato, ham, and chicken stock.

Split peas & lentils both foam when you wash them. It's similar to the foam you get on the top of cooking beans. I remember the 1st bag of lentils I ever bought I returned bc I thought something was wrong with them when they foamed up when I washed them.
No. Because even though the water would be boiling, water under pressure actually gets above boiling temperature, up to approximately 240°F. The extra pressure at the allotted amount of time called for is what it takes to kill the bacteria and bad stuff that could make anyone who eats it sick, or maybe even worse. And, modern pressure canners such as American Canners and Presto, arguably the two most popular canners being used today are very safe. They come with a safety feature that when the canner is used properly on a gas or electric stove (Not a fish cooker!) are very safe. There is no reason to be afraid of a pressure canner as long as you follow the directions that came with your canner. Is you get a used one, make sure to get an owners manual with it or you can email the manufacturer and they will provide one for you. Also if you get a used one it would be wise to order a new lid gasket and if it comes with a pressure gauge, have it tested at your county extension office or dinner place that is qualified to check them. I open a jar of these and put in my bean soup, really adds to the soup.

They are old jars. You can’t get them anymore.
