I think I'd forgotten the "Grid" settings. But had seen this before. Still getting the hang of this rig. Lots of fine tuning options and things to tweak for best fit to you application and desires.
There are eight levels of signal strength in the top part of your scope (stronger signals reach higher on the scope). Grid one is the bottom one, grid eight is the top.

He explains how the grid system works on the spectrum display. How it is set will dictate how it is displayed on the waterfall. High signals either change the signal color on the waterfall or not based on the grid setting.
