Last night my friend and I were discussing on making a cake half with raspberries and the other plain vanilla. Some people don’t like berries, but we wanted to use them in our pastry cream and frosting for a spring look for half of the cake.
We haven’t worked with sugar and water designs before, will have to watch how you do it in greater detail. This could definitely work for our plainer side of the cake. I had been thinking of coloring white chocolate and making designs from them. We will see.

We will be making this cake hopefully early next week since I have chemo this Thursday. We are making it for my pharmacy crew at Safeway. They’ve been so awesome in so many ways while I’ve been sick. And now that I’m getting stronger all the time, it’s perfect for a thank you gift.
We are unable to make these fancy cakes in one day. One, I don’t have the required energy just yet and two, it just seems to take a lot longer than what the directions claim. If a certain part says it takes 5 minutes, it will take us about thirty. If it says prep is five minutes, sometimes it can take close to an hour. It blows me away. And it’s not like we’ve never been in a kitchen before, so I’ve always wondered if a lot of the chefs out there kinda fudge the times. 🙃
In addition, we usually can’t start making our cakes until after dinner and everything is cleaned up. So it’s not unusual that we are still in there till very late, sometimes midnight. We try and get the cakes made the first night with a crumb coat and finish the next day or sometimes two more days to complete it. Thankfully, I have a vanilla cake recipe that stays tasty for a long time. My goal is to make all of the cakes in one day and complete the whole thing the following day.
Yes, I know this is embarrassing to admit, but we are both learning so much every time we tackle an amazing cake on. And the smiles we get when we hand them out in thanks makes every minute and every little mess up worth while. We’ve been real lucky on their feedback too. They’ve loved the taste of the cakes every time so far. It’s all in the recipes with minor changes.
I will take pictures on completion and send them to you via email. Please just keep in mind we are still learning and it is all a work in progress.

Beautiful cake! I have watched your 4 Minute Buttercream Frosting video. How do i make that into Berry and Caramel? Thank you :)
For the berry buttercream I simmer mixed berries with a small amount of water and sugar until it made a sauce and then when it cooled I stirred it into the buttercream. For the caramel I just added some dulce de leche from a can - my favourite!

The berry buttercream looks delicious. What's the recipe please?
How long did it take you to complete all the icing for this cake? I’m thinking of making it for a joint birthday party but am unsure if I’ll have time to fit it all in
The icing was quite quick because it doesn't need to be perfectly smooth before applying the texture and the texture part only takes a few minutes. Just checked the raw footage and after the crumb coat it took me 8 minutes for each half to spread on and roughly smooth the frosting and apply the texture

That's a great question! I've never tried stacking a half and half cake. I think if you keep it chilled it will be stable enough!

Can we use water instead of vodka to mix gold dust?
Alcohol works better because it evaporates quickly so doesn't make the cake soggy. But you can use a clear extract like lemon extract if you dont want to use alcohol

Will the cake stay together after a car ride?
It should! I keep cakes in the fridge until transporting so they're cold and sturdy and then they'll be more stable for the drive
