Agreed, it's so irritating when 99% of stories the man avoids physical affection as much as possible. Physical affection is one of the most important factors in a relationship, sex or rather the lack thereof is a very strong predictor of a relationship failing.

I think as long as you aren't rude, insulting them or degrading them, tsundere would work irl. Being shy and not honest with your feelings can be cute, since your actions of hanging out with the person prove otherwise. It can turn into a flirty dynamic, as some of these Manga stories have females who are tsundere, but aren't negative to the male interest.
But yeah, if you are negative to the person you like, then I would want the guy to respond with the assumption of the girl hating him and not notice her feelings.
But stuff like getting them to be a gofer is not bad, as long as you give them the money to pay for it and are somewhat strict with a minimum of 10 mins for them to get what you want. And say thank you when they do get you what you want.
