Need to measure the temperatures at your Thermostat housing, upper and lower inlet and outlets on the radiator. If you haven't been running a thermostat that won't allow the radiator to exchange heat properly from the fluid to the air. I'd put a 180 degree thermostat in purge it at the Allen wrench fitting that was next to the EGR cooler. If you have to reinstall the thermostat I'd throw a pump in it's only 65 to 70 dollars and 2 bolts. Also check the fan clutch operation it is electronic controlled.
The problem is one-ton pick-ups are not built for commercial use! Why aren't you using your semi? You need to make it your policy to never use your pick-ups again only use the semi!

If the truck stays cool while driving but heats up when you slow down or stop then I’d check your fan clutch
