O would serve that meal in 3 different dishes, one for Vegetables, on for meatan one for couscous. so that people can get each one for their plate. not all in one plate. its more difficult to serve.

Wa alaykom assalam sister, usually I buy the pack of couscous from Arabic stores or Indian, than I steam it three times. I have few videos on my channel explaining the method in Arabic, maybe in the future I’ll post one in English. Enjoy

Too bad she didn't show the process to make the cous-cous "rice", itself. Have only had/helped in making Algerian cou-cous. As I recall, it required multiple steamings, etc and was the more time consuming part of the dish. It is delicious, though!

I use the lamb shoulder or the leg. My first choice the shoulder.
