Btw, you might want to buy an Indian pressure cooker to speed-cook things like potatoes and lentils (thinking about your idli sambar vid). Your reaction to the cooker's whistle in the dal dhokli vid with Chef Sanjyot still makes me lol😂

Nailed it, only change is I would use an Indian Wok ( Kadai) for frying the fritters, a saucepan being more shallow wastes a lot of oil. Well done bro
I always add carom seeds/Ajwain alongwith asafoetida and other masalas into the Chickpeas/gram flour/besan to make it more tasty and nutritious (better for the digestion). Your efforts and the results thereafter for this (including the Vegan bread bun) recipe are on point 👍 Keep up the great work!

Not taking anything away from the brilliant chef...
I'm from Mumbai and have savoured vada pav since childhood. My issue arises when both Indians and non-Indians attempt to replicate any 'PAV' (bread) dishes. I've yet to find someone who can bake the 'laadi pav' perfectly. It's simpler to get the vada and chutneys right, but the pav is crucial. The 'laadi pav' I refer to comes from bakeries across Mumbai, adding an essential element to the dish. I've tasted vada pav elsewhere, but it lacks the essence without 'laadi pav'.
Imagine it like using thick bready dough for pizza instead of Neapolitan-style dough. It might taste good, but without the right base, it doesn't feel the same.

actually we don't likes too much sweet we like spicy🌶️ and we mostly not use jaggery & tamarind and I don't like jaggery & tamarind
actually I only eating tamarind salt and red chilli pepper 😋
in my preparing style of vada pav not smash potato

just one thing, coriander should be hand picked instead cutting with scissors, avoid stems as much as possible (it makes taste bad), take leaves and only bit of leaves stems with it.
Please open a restaurant so I can eat there everyday 😋

You can make a lot of Indian dishes without garlic too
Coz in India ,there are many communities (Jains, some sects of brahmins) that don't eat onion, garlic ,mushrooms etc.. and therefore you will find many restaurants often serve "jain version" of many dishes. Without garlic , onion etc .

I'm sure any veterinarian would love it...there's also aloo tikki burger street one better than McDonald aloo tikki burger but homemade one have more profile and easy to make also affordable... Its inaccurate to use "India's most famous" with this dish. There are more haters on vadapav than lovers of it. The "Famous" snack changes ever 100kms in India
