William Smith was very intelligent as well as being tough as hell. He had a master's degree and taught at UCLA, could speak several languages and was a Korean War veteran. He was a champion weightlifter and arm wrestler and was even in the Guinness book of world for weightlifting at one point. He was also into bodybuilding and was an amateur boxer. He was in a million movies and TV shows so had a very successful acting career as well.

I think Sifu makes up a lot of his dialogue on the spot. I used to do some improvised acting work and his "confidence rarely seen in this day and age" doesn't sound like it came from a script. There's some things that can only come from improvisation -- it's all about the editorial choices afterward.
