Good Day Chef 🇺🇦🧑🍳. That marinade looks like it would be good for many things. You are correct in saying that we can substitute Tarragon for Dill. However for me it's a no thank you on the salmon. Cod loins or maybe shark 🦈, shrimp 🦐 possibly calamari 🦑. In the restaurant bizz you can buy a product called Catfish nuggets, basically pieces of catfish. I would dust them with Cajun spice and skewer them and cook on the flattop grill. For an appetizer or on a salad 🥗 it sold well. Have a Blessed and Beautiful Day 🇺🇸✝️🇺🇦📖🙏✌️💜🥀😘

I worked in a French restaurant where the chef made his own cured salmon for an appetizer and I did enjoy the salmon that way sliced a little thicker and chargrilled with lemon 🍋. The curing seems to tone down the flavor for me. I have some ocean pearch I'm going to try in your marinade. Don't know if I will bake it or saute it, of course you will find out 🤭. I did the wedges in a separate pan and used a stone ground mustard in the marinade. I also cut the Hen up into 5 pieces and cooked uncovered and the reduction was great. If you place the salmon directly onto the sheet, it actually releases too much juices and then kind of boils in said juices instead of broiling. The broiling process actually seals in all the juices on the inside :)
