Classic Weetbix Slice

Thought it was time do something sweet and weetbix slice is so flippen easy! And which New Zealander doesn't have weetbix in their cupboards 😏
Slice:
180 grams of melted butter
1 cap of vanilla essence
3 crushed weetbix
1 cup of dessicated coconut
1 cup of plain flour
1/2 cup of sugar
1/4 Cup Cocoa
(Optional, you can add chocolate buttons, or raisins if you want as well)
Icing:
1 1/2 Cups of Icing Sugar
4 heaped TBSP of Cocoa
100 grams of softened butter
Add hot water to combine

Family favourite in our household when i was a child in the 60's. Us kids called it "Mud" .It was delicious!! I can remember after school walking home and coming to the end of my street on days my mother had baked "Mud" we could smell the beautiful aroma and knew what was waiting for us when we got home...Yummy after school treat❤

I brought a few big boxes of weetbix back from my last trip home to the US. Although we never made these back home we would buy them from the local bakery or ate them when someone had made them for a school function or hui. My kids absolutely loved them! I found your channel the other day and the nostalgic recipes and kiwi classics are all here on your channel! I just made a batch of these, i also had a taste test of the batter too! Yum! My kids will be home from school soon. They are gonna love these! So thankful for your channel. I appreciate you both! ❤
