also as a Chef for over 20yrs, it greatly depends on the type of steak, however in my opinion, for Ribeye, Strip, and Sirloin you want it about an Inch thick, if properly cleaned and whatnot, should give you about a 16oz Ribeye, 14oz Strp, and 12oz Sirloin. As for T-Bones/Porterhouse, btw the way reason that little side is so delicious is because it is the Filet part of the cow, the other side of the bone is the Strip, about 3/4ths an inch, and Filets you want about 2in thick. The reasoning behind all of these is because when you cook them it allows you to have a gradient from rare to well done, if the steak is to thin, they will cook very quickly but to have a steak look rare, it won't actually be up to temperature.
One of the few very useful projects that you made the sawmill shed is great love the barn door with the window I`m stealing that idea for myself. The hole in the ground not so much I'll be there soon enough permanently lol. Also, the pond with the steel walls are also great, as well as the cottage.

37:11 the longest side of your t-bone is New York strip, the reason you love the small side is, it's a tenderloin aka filet mignon. 1 1/4" for tenderloin.

Consider altering the roof so all the snow and rain drains of the back side of the shed making easier access into the shed when it snows and the snow slides off the roof.

5:49 Just a thought, but wouldn't you want to use two chains? Also, offset the log so the front is heavier by 25-50lbs and then slap a chain under the front so it stays off the ground when you're moving it... Most of the weight is still carried by the center of the lift with the wheels and only the offset weight is carried by the front of it. I could be wrong though...
