I always find gluten-free cakes to be tooooo fudgy and almost hard to eat! I think I am running into the completely flourless cakes, so I like how your take on a gluten-free cake looks a little more cake like :)

To dust icing sugar i use a tea infuser (the kind that open when you pinch them). Very practical for small quantities.
