    I tried this recipe yesterday and it was delicious! However, I used monk fruit as the sweetener but during baking my loaf had this clear liquid (I’m assuming it was the sweetener). I’m new to gluten free, low carb eating. I’m prediabetic and enjoy sweets. Do you know anything about monk fruit (or can suggest a replacement that works with your recipes?). My loaf shrunk to 1 1/2 - 2 inches but was still eaten with strawberries and blueberries and cream! Tasted yummy!!!

    Would this cake hold up well to adding blueberries to the batter?

      I haven't tried it, but that sounds delicious! I'd use a little of the flour to coat the blueberries and then fold them through at the end.
