Yes - i use a piping consistency (think soft serve ice cream) for the outlines and details. Then I used a flood icing consistency that is similar to honey. (it's a 10-sec icing). I am a new cookier and all of asudden, I am having a terrible time with my royal icing and the air in it. I can't figure out what I am doing wrong. When I first started I didn't have this trouble. I even thought it might be the meringue powder and so I switched. Any advice would be so helpful. Maybe I am to much of a perfectionist but I don't see any bubbles and rises in your cookies like I see in mine!
Maybe its when you mix your colours. If you mix with a spoon, it ads air into the Icing because of how it is shaped. It should be done with a flat spatula or a knife. Also when you scoop it into the piping bag be careful to not have air pockets ☺️ you can always pop the air bubbles with a scribe tool or toothpick too.
Let flood rest for 30 mins before putting in your bottle or bag. The air bubbles will rise to the top and you can swipe your spatula over them and pop them. I find I get more air bubbles when my icing consistency is mixed just a little too thin. Add water slowly and take care not to go too thin. Thicker icing has less bubbles. I hope this helps!!
I like to complete the process in 36 hours (from baking to packing). Allowing the cookies to dry before packing. If I'm trying to get ahead, I will freeze cookies (packed well in freezer bag or container). An alternative to the royal is a glaze icing. You should check into and see if that would work better for you.

@@pazviveroscarrillo9955 I agree - you can 'mix in air' if stirring to vigorously too. So be easy on the icing when making the flood.
What kind of icing did you use on the stencils?
I'm using stiff or thick royal icing - it helps hold the shape better!
