      Yes Barbara I’m from Bangalore. I stayed in Marian Hostel in 1975 while doing my BEd. Are the same Barbara from Bombay?

    Fantastic! Happy new year Bridget. I learned something new today. I didn’t know tamarind helps preserve meat. Thank you for continuing to share your knowledge with us. I’ll try this soon once summer is over. It’s too hot in Perth at the moment.

    Wish to ask Madam Bridget White in which Indian Railway Colony were these Anglo-Indians residing? Because, near my old native place of Londa that was also an important Rly Junction, there used to be an Important Railway Station Junction called Hubli where there used to be plenty of Anglo-Indian families mostly who were on the Running line such as Drivers, Guards and Travelling Ticket Examiners. No doubt Tamarind juice was used as a preservative but wouldnt that make this curry also a bit sour?

      Thanks for your comment. Yes it does make the curry a bit sour. That’s what gives it its unique taste. I’m not specifying any particular Railway Colony. I’m talking about the whole of India. Adding tamarind is a preservative just like vinegar

      Which we add to Vindaloo. Everything in moderation so it’s not too sour but slightly tangy
