They’re really similar. But Anakin was taken into a cult at a really young age and shaped much more so than Paul. Anakin was sold on the prophecy but felt lost due to the hypocrisy of the Jedi when it came to him. His prescience was also heavily manipulated and teachings were kept from him. Paul led a relatively normal life for his tax bracket until the demise of his family. His fear and unsureness came from a place of not accepting the prophecy. After he drank the know juice all his doubts was gone. That part of him was lost and he became filled with purpose, a very painful purpose but one he accepted. Anakin upon turning to the dark side completely lost his purpose and lost his battle against his own emotions. He became fear and anger. While Paul became a sacrifice for the greater good. They’re almost like two sides of the same coin. In retrospect though, the will of the force fully manifested in Anakin even without his knowledge as it was the will of the force that wanted both the Jedi and the Sith orders gone.

If there was no Jedi Order then you have an force sensitive people with an extremely high risk of dark side influence. If you know anything about Star Wars lore then you would know how unchecked force sensitives ultimately end up. So, the Jedi find force sensitive people (potential threats to the galaxy) and help keep them on a good path or at least a neutral path because of the extreme risk of them being influenced by the dark side, which is by definition intoxicating. You lose yourself within in, take Anakin for example. An actual negative alternative would be for an already established cult to find these force sensitives and kill them out of fear of the potential harm they may or may not cause.
