The multitasking skills are exquisite. Relying on a team is imperative. One person falls short and everybody else strains. It would be nice for them to even let you know somehow that you have that work ahead of you, even mentally preparing helps. I get it

I used to work at a pizzeria and it was me and this guy from Guatemala and i was surprised and impressed how he could run the kitchen all by himself. he was 10 workers in 1. He would prep and cook. He reminds me a lot of yourself. you guys have the same sarcasm and work ethic. my respects to you my guy because you make it look easy. but that’s when you know you’ve mastered your craft.

Alex the manager in the owner of the restaurant should tell all the waitresses and waiters do not take orders like that first thing in the morning and if you do call Alex and let him know that he has 20 or 40 breakfast burritos he has to make so he can come in earlier because you have to prep a whole kitchen I don't think those waitresses realize that I think all they think about is your tips you're an awesome you're awesome cook you work very hard for you and your wife

@@ohb7517 a lot of places will have a policy that large orders must be placed in advance. Like asking for a group of 30 or something, i don't think i've ever seen a restaurant that will just allow a huge group to walk in unless it was planned beforehand

I worked as regional for 2 years for Dennys and had 9 stores. I can tell you that you are no different than 99% of cooks I’ve met and/or seen work. Basically everyone has your attitude and even the friendliest staffs that all like each other have blow ups from time to time. It’s part of boh/foh tradition. You don’t have to explain yourself or apologize for offending viewers, it’s hard to pretend to be someone you’re not while on camera. You don’t cut out the parts where you get emotional and lash out, and while you lack accountability and push everything onto others, we appreciate your transparency. Your cooking space is very clean and I am impressed by that. Take care!
It would be interesting to see other parts of the restaurant a little, who is involved and how it functions. Also seeing the kitchen turned down/deep cleaned would be relaxing to watch.

Used to work in a 48 lane bowling center it was hell those days only one double fryer and one flat grill just like that one u are using but always made it work and wouldn’t stress because knew it had to get done like u said me crying or being mad wasn’t going to make them stop ordering
Ok, you said lmk what you think, here it goes. I think it would be wise to get a measuring utensil for the eggs to make sure you have enough and that they are consistent. Maybe like a 1/4 cup or something, because the first burritos get way more egg than the last ones. It would make it one less thing to worry about. 👍🏼

You can look at it this way.. If a waitress wants to order food from you when she is off, she must like your cooking.. With her being off she could eat anywhere, so take that as a good thing even tho it adds more work for you.
You should put the tortillas on the grill while you are wrapping the ones you just took off, get your bigger frying pans out and put the eggs on the burners and just stir it every now and again while doing other stuff, use half the cook top to do all the hash browns make them a little thicker squirt water on them to fluff them up. You are too worried about making a mess you can clean after the rush just get it done fast.

You would have looking it at it for a minute and carried on and started over and you would have probably worked in making the replacement burritos with catching up the other orders. That was a rush. You got it done tho. That’s a morning to walk into.. 20 fresh burritos right when you clock in. I worked for this bbq place. Had 40 pounds to cut a hour before we opened. I was the meat slicer and I was just like you, keep calm it’ll all get done. You’re on another level, you were serving the walkin customers as well. Way my meat board was set up I couldn’t do that. I’d have to tell the walkin customers to wait.

You would have looking it at it for a minute and carried on and started over and you would have probably worked in making the replacement burritos with catching up the other orders. You would have handles it. You seem to be someone that takes responsibility seriously.

That was a rush. You got it done tho. That’s a morning to walk into.. 20 fresh burritos right when you clock in. I worked for this bbq place. Had 40 pounds to cut a hour before we opened. I was the meat slicer and I was just like you, keep calm it’ll all get done. You’re on another level, you were serving the walkin customers as well. Way my meat board was set up I couldn’t do that. I’d have to tell the walkin customers to wait.

Mijo, we need to get you graduate you into a head chef in some bigger kitchen because its obvious you're in a different liga. Youre too advanced at this point. I hope Le Cordeun or some other top school will give you a full scholarship to do what you want to do next. Maybe have your own spot? Whatever it is , you have a special talent and an advanced short cook memory and cleanliness.
