You've inspired me so much that I was able to develop my own style in my everyday cooking. I hope that you are always doing well. 💕
To unwax a lemon, boil the kettle, add a small sqidge of washing up liquid and use a green scourer, give them a quick scrub but not hard, rinse well and dry them off, voila unwaxed lemons, also add some peas to the lettuce and after cooking add a bit of heavy cream, delish x

People complaining about the lack of salt - you obviously season this after it’s cooked. Adding salt before it’s cooked, when everything’s densely packed in a roasting tin, would ruin the texture as the salt leeches the liquid out. With traybakes like this, it’s best to add salt (and pepper) afterwards.
Finally, someone who understands the science of seasoning. Most of these commenters just watch other cooks always pre-season with salt and assume you always do it.

You guys have to remember, Nigella is roasting the food in the oven. If you put salt and pepper beforehand, what actually happens, is the pepper burns before the rest of the food is cooked, and the salt releases the water in the food, drying out the chicken and making everything else watery. Do it afterwards.
Made this for the first time today (Summer of 23) and wow...I wasn't sure I'd how feel about eating the lemon chunks whole, but they are delicious! Chicken turned out tender and juicy with crispy skin, and there was so much sauce created to spoon over. Nigella if you ever see this...wow, wonderful recipe!

This is a wonderful recipe, and reminds me of a Greek style chicken.

Actually if you roast properly with the right ingredients you probably dont need to season chicken for the caramelized salty flavor. Theres salt in the lettuce anyway.

Yep, tried this last night, chicken came out the consistency of sand , same time , lower temperature even ... I'd say 1 to 1.5 hours no more for this recipe, anything more and you're drying up the meat completely

Olive oil... plenty of salt on the greens. people are so anxious to be be recreationally angry. The only thing that perplexes me is the length of time on the chicken. The US conversion would be 320• for 2 hrs and then 400• for 45 minutes. That can’t translate properly.

I think you were watching a different video, or you would have seen her chopping up a lemon, pulling two heads of garlic apart into cloves, tearing up fresh thyme, pouring olive oil, mixing it all up by hand, and tearing off a piece of foil. Watch again.

Tom His3 if you pat the chicken dry and actually salt liberally (with kosher), leave for a few hours, you get A far better outcome.

If you cooked the chicken covered then no way the skin was crispy.

Tried it. Did exactly as instructed. Burnt to a crisp. The juice always evapourates.

She wanted a braise for the lettuce. That’s why she seasoned it beforehand. The chicken was to be roasted.
Seasoning is salt and pepper, the other stuff are herbs and aromatics.

Right--I cooked the chicken at 275 degrees for1 and1/2 hours and then took the foil off and out it under the broiler for 15 ins.
